For those of you who don't know me, I'm hardwired to fight injustice. I successfully fought the DEP for 4 years to get Amy's Take-Away open. But I'm 20 years older now and I have less stamina. In fact, I had been planning to retire in 2026.
What is now being required of me by the DOH is a duplication of my existing system that, after recent extremely expensive repairs, is functioning perfectly. The requirement is unacceptably expensive and onerous (especially at my age) and I would not acquiesce even if I could afford to pay for it.
I'm not leaving the area yet so if you're in the neighborhood,stop by; if you have a cooking question, call me up; if you have a child who'd like cooking lessons, please get in touch w./ me? Please know I'll be holding all of you in my heart w./ deepest gratitude?! XOX Amy

🌼 I've been growing marigolds as a companion plant to my tomatoes for years. Today I'm posting them on the Day of the Dead because tradition believes that they guide the spirits back home. This week would've marked the start of my twelfth annual Soup Pop-up @ Amy's Take-Away and my fourth year @ the Winter Phoenicia Farmers' Market. Alas! I am being forced to close by the requirement for an exorbitantly expensive addition to my existing equipment that I cannot afford. To all of you who bought and appreciated my food for almost 20 years, a huge THANK YOU from my heart. Your appreciation meant the world. XOX 🧑

🐣 🌷 πŸͺ»One of my 3/24/24 PFM hot soups is White Borscht (or Bialy Barszcz in Polish) traditionally eaten on Easter Sunday made w./ ingredients blessed in church on Holy Saturday. The hard cooked egg garnish is a symbol of hope in new life. I first made this soup to honor my Polish friend Katherine who gave birth in April during the pandemic. Her adorable son Leon is a champion soup appreciator. (You can see his photos on my PFM table) Also serving hot "Palmito" (Brazilian/Hearts of Palm Soup) and 16 Frozen Asset soups to take home. I wish all who celebrate a Happy Easter!

Partake of my 'trip down memory lane' this Sunday,3/10 (11-2) @ Phoenicia Farmers' Market when you order my Gumbo w./ Andouille Sausage & Shrimp served hot. Please ask me about the hack for dark chocolate brown roux I learned from Enola Prudhomme (Paul's sister) that I now use? β˜ƒοΈ πŸ”₯ One of this week's two hot soups to be served @ Phoenicia Winter Farmers' Market on Sunday, Jan.28 (11AM-2PM) is a longtime favorite: Butternut Bisque. According to my famous restaurateur Cousin Buz who gave me the recipe decades ago, this soup was created by Ruth Reichl while she was editor of Gourmet magazine. "Bisque" is actually a misnomer since this soup is dairy-free. In my continuing quest for increasing "Flavor", I've also adopted a vegan 'nose to tail' technique of using the butternut peels & seeds to make the stock. Beautifully colored, w./ a whisper of ginger & lime counterpointing the caramelized alliums, it's the perfect lunch or pre-dinner starter. A carnivore cousin Pumpkin Apple Soup w./Ham will also be served hot and a baker's dozen of Farm Fresh Frozen Asset Soups will be available. Soups can also be purchased from Amy's Take-Away by calling (845) 688-9759 to arrange pick-up.
