Arroz con Corned Beef is one of our favorite comfort foods! It's a quick and easy recipe that's perfect for a weeknight dinner. If you've never tried Arroz con Corned Beef before, you're missing out!

Ingredients:
* 2 cups white rice
* 1 can of corned beef
* 1 small onion, chopped
* 2 garlic cloves, minced
* 1/2 cup of Sofrito
* 1 can tomato sauce
* 2 1/2 cups water or chicken broth
* 2 tablespoons vegetable oil
* Salt and pepper to taste
* 1 cup of Latin-style fried ripe plantains (maduros)
* Homemade potato fries
Instructions:
1. Rinse the rice in a strainer and set aside.
2. In a large pot, heat the oil over medium heat.
3. Add the chopped onion and minced garlic to the pot. Cook until the vegetables are soft and fragrant, stirring occasionally.
4. Add the can of corned beef to the pot and break it up into small pieces with a spoon. Cook for a few minutes until the meat is lightly browned.
5. Add the Sofrito to the pot and stir to combine with the meat and vegetables.
6. Add the can of tomato sauce to the pot and stir to combine with the meat, vegetables, and Sofrito.
7. Pour in the water or chicken broth and add salt and pepper to taste.
8. Bring the mixture to a boil, then reduce the heat to low and cover the pot.
9. Simmer for 15-20 minutes, or until the mixture has thickened and the liquid has been absorbed.
10. While the corned beef mixture is cooking, prepare the rice according to the package instructions.
11. When the rice is finished cooking, fluff it with a fork and set it aside.
12. Fry the ripe plantains (maduros) and homemade fries.
13. When the corned beef mixture is finished cooking, mix in the fried ripe plantains and homemade potato fries.
14. Spoon the corned beef mixture over the rice on the plate or in the bowl.
15. Serve hot and enjoy!
Note: You can adjust the amounts of Sofrito, salt, and pepper to suit your tastes. You can also use store-bought or frozen fried ripe plantains (maduros) and fries, or substitute them with your favorite side dishes.
