Our events are meticulously planned – from start to finish – and designed to meet the specific needs of our clients. Budget, location, time of year and outside services are all taken into consideration to enable us to create a memorable occasion. Aside from our own staff of professional waiters, bartenders and chefs, Kensington can coordinate floral arrangements, decorations, rentals, full bar and

beverage service, valet parking, video, audio, photography and entertainment. Should a client have already retained any or all of these services, we are more than happy to coordinate with those vendors. Personalized menus are a Kensington trademark. Our menus are created to reflect our client’s personal tastes and set the tone for each event. Our experienced Executive Chef and kitchen staff places great emphasis on exquisite food presentation. We use only fresh, high quality ingredients when preparing a selection of foods that taste as wonderful as they look. It is our unique blending of the old and the new that has made Kensington one of the most sought after caterers in Southern California. Whether you are planning a cocktail party for fifty or a gala for thousands, Kensington takes enormous pride in creating an affair to remember. We have successfully coordinated every type of event including corporate functions, charity affairs, weddings, award presentations, political banquets and studio screenings as well as a wide variety of special occasions in private homes. Furthermore, our development of a kosher division has allowed us to be the ideal caterer for bar and bat mitzvahs, Shabbat dinners, and all other traditional Jewish celebrations. This week has certainly been one of the most difficult for most of us with the fires raging all over our state and the resulting ash-laden air preventing even the most basic of outdoor activity. Not the lovely and gentle transition to Autumn that we may have been expecting…

We can only continue to be grateful for what we do have, and maybe try to reach out to those more affected by the loss of property, and life in some cases, caused by this most recent catastrophe.

FIG AND BLUE CHEESE TART
(WITH PROSCIUTTO)

INGREDIENTS
1 tablespoon good olive oil
1 sheet puff pastry, (store bought is fine), thawed
1 pound ripe figs – any kind will work well
1 teaspoon sea salt
1 tablespoon thick balsamic vinegar – a good aged one
2 tablespoons honey, local wild if available
1/2 cup firm blue cheese, crumbled (I like Stilton but any blue will do)
Optional: 6 thin slices Prosciutto and 1 cup baby arugula

METHOD

Preheat oven to 375° f..
Roll out your puff pastry dough into a rectangle until it’s about 1/4-inch thick.
Fold over about a 1/2-inch on each side to form an elevated edge all around which will contain the contents, as it can get a little juicy and messy while baking. Arrange on ungreased baking sheet.
Stem and cut the figs in half and arrange the cut-side up on the dough.
Use a pastry brush to brush the cut-side of each fig half with the olive oil and sprinkle each with salt.
Drizzle the balsamic the honey all over, making sure each fig gets a little amount of each.
Sprinkle the crumbled cheese evenly on top.
Bake until crispy and golden, about 20-25 minutes. The figs should look a little caramelized so adjust time accordingly and briefly broil if necessary.
Remove from oven and allow to cool at least 10-15 minutes
Serve as is or arrange prosciutto and arugula as shown in photo. Bon Appetit!

Dog Days:

Plural noun. the sultry part of the summer, supposed to occur during the period that Sirius, the Dog Star, rises at the same time as the sun: now often reckoned from July 3 to August 11. a period marked by lethargy, inactivity, indolence. To the Greeks and Romans, the “dog days” occurred around the day when Sirius appeared to rise just before the sun, in late July. They referred to these days as the hottest time of the year, a period that could bring fever, or even catastrophe.

Who knew that this popular phrase has such an ominous meaning or connotation. I had always associated it with being relaxed, perhaps simply reading around a pool on a lovely Summer afternoon, with cold beverage of choice not too far away….hardly lethargy and catastrophe! This year however, it does feel a little different - we all have so much more time to actually sit around and enjoy the beautiful Summer weather, but this is not the way we would want it to be of course, and therefore it is difficult (increasingly so as the weeks drag on and on) to actually be able to take advantage of the “down-time” forced upon us. And as a result, I am feeling a little sorry for myself more than usual, and drinking and eating like the ancient Greeks and Romans!

Following my annual doctor’s check-up this past week, my doctor berated me for increased weight gain, increased alcohol-consumption (I was mostly honest with her). I had expected her to commiserate with me and the current predicament of our particular industry. which she did for about a nanosecond. Then she looked straight into my eyes and said that I should feel lucky to have this opportunity to take better care of myself and that this opportunity would most like never present itself again.

So for the moment I am walking a little more each day, eating a little “better”, and drinking a little less. For the moment. If any of you are following similar paths during this pandemic I salute you (it’s already not easy and it has been only a few days) and if there are menu items you would like us to feature on our Weekly Specials that make this easier please let us know.
