Roasted Brussels Sprouts with Apples 🍏 & Pomegranate Seeds 🌱🥣 This dish makes a great Autumn 🍂 side dish, and a festive addition to your Holiday table❗️ Recipe 🗃️
Preheat the oven ♨️ to 375 degrees Fahrenheit
Serves 6️⃣-8️⃣ Guests
INGREDIENTS🔪🔽
⏺️ 2 lbs. brussels sprouts, trimmed, washed & cut in half 🔪
⏺️ 3 Tbsps. olive oil
⏺️ 1 tsp. garlic 🧄 powder
⏺️ 1 tsp. onion 🧅 powder
⏺️ 2 granny smith apples 🍏, washed, peeled, cored & diced small
⏺️ 2 Tbsps. balsamic glaze
⏺️ 1/4 cup pomegranate seeds
⏺️ salt 🧂 & ground black pepper to taste 👅
INSTRUCTIONS👨‍🍳🔽
1️⃣ Wash & dry the brussels sprouts. Slice the ends off the brussels sprouts and cut the sprouts in half, lengthwise. Place all the sprouts into a large bowl 🥣 and add the granny smith apples 🍏, olive oil, garlic 🧄 powder, onion 🧅 powder and salt & ground black pepper to taste 👅. Mix well with a rubber spatula to combine the ingredients. 2️⃣ Line a sheet tray with parchment 📜 paper. Transfer the mixture from the bowl 🥣 to the sheet tray. Place the tray in a preheated oven ♨️. Roast for 45 minutes. 3️⃣ Remove the sheet tray from the oven. Transfer roasted mixture into a large serving bowl 🥣. Drizzle with balsamic glaze & sprinkle 🤏🏽 with pomegranate seeds. 4️⃣ Serve & Enjoy 😊 💚👨‍🍳❤️🌱🥣🍂

Whipped Maple 🍁 Sweet Potatoes 🍠 with Roasted Pecans 🌱 Whipped sweet potatoes 🍠 are my Holiday favorite. This version is dairy-free, vegan and refined-sugar free and guaranteed to please your guests❗️Recipe 🗃️
Serves 6️⃣-8️⃣ Guests
Preheat the oven to 375 degrees Fahrenheit ♨️
INGREDIENTS 🥣🔽
⏺️ 6 medium sweet potatoes 🍠, scrubbed & prick all over with a fork😅
⏺️ 1/2 cup pure full fat unsweetened canned coconut 🥥 milk 🌱🥛
⏺️ 2 Tbsp. pure maple 🍁 syrup
⏺️ 1/4 tsp. ground cinnamon
⏺️ pinch 🤏🏽 ground nutmeg
⏺️ salt 🧂 & freshly ground black pepper to taste 👅
⏺️ 1/4 cup *roasted pecans, chopped 🔪
INSTRUCTIONS👨‍🍳🔽
1️⃣ Prick sweet potatoes 🍠 all over with a fork. Line a sheet tray with parchment 📜 paper. Place sweet potatoes 🍠 on the sheet tray and roast for 55 minutes to 1 hour. Make sure the sweet potatoes 🍠 are really soft. Remove sheet tray from the oven and set aside. 2️⃣ In a small pot or saucepan, heat coconut 🥥 milk 🌱, maple syrup, ground cinnamon and ground nutmeg over low heat ♨️ Keep warm until ready to purée the sweet potatoes 🍠. 3️⃣ When the sweet potatoes 🍠 are cool enough to handle, peel the skin off with a spoon 🥄 and scoop the flesh into a bowl 🥣 or food processor. Add the warmed seasoned coconut milk mixture to the bowl 🥣 and puree until smooth. Season with salt 🧂& freshly ground black pepper to taste 👅. 4️⃣ Remove from the food processor. Transfer to a serving bowl 🥣 Add roasted pecans. 5️⃣ Serve & Enjoy💚👨‍🍳❤️🌱🍁🥣‼️

This dish is packed with flavor and makes a camillolicious holiday entrée sure to please everyone at your Thanksgiving 🍁 table.
Serves 6️⃣-8️⃣ Guests
INGREDIENTS 🗃️ 🔽
⏺️ 1 1/2 cups dry brown lentils
⏺️ 3 cups vegetable broth
⏺️ 4 Tbsp. golden ground flax seed meal
⏺️ 1/2 cup water
⏺️ 3 Tbsp. olive oil
⏺️ 4 cloves garlic, grated
⏺️ 1 medium sweet onion 🧅, finely diced
⏺️ 1 small red bell pepper 🌶️, finely diced
⏺️ 1 small green bell pepper 🫑, finely diced
⏺️ 1 large carrot 🥕, finely diced
⏺️ 1 large celery stalk, finely diced
⏺️ 2 leeks, white part only - washed & finely diced
⏺️ 3/4 cup gluten-free oats
⏺️ 1/2 cup gluten-free oat flour
⏺️ 2 tsp. Italian seasoning
⏺️ 1 tsp. ground cumin
⏺️ 3/4 cup flat Italian parsley 🌿, wash & remove stems - then chop 🔪 finely
⏺️ salt 🧂 & ground black pepper to taste 👅
GLAZE FOR THE TOP▶️
⏺️ 3Tbsp. organic ketchup
⏺️ 1 Tbsp. balsamic glaze
⏺️ 1 Tbsp. pure maple syrup 🍁
