One of my favorites! This elegant wedding cake was designed with a hint of rustic, to match the outdoor venue, and a whole lot of class to match the newlyweds.
The flowers were all sculpted from gum paste and handpainted to match the floral bouquets on the tables. The fondant was custom colored to match the theme of the evening, then rolled out to less than 1/8 inch thickness (no one wants to chew the icing . . .yuck!). Double-barrel Vanilla Cake base, with Chantilly Cream and fresh berry filling. This 12 layer cake was completely gone by the end of the reception.
On either side of the cake is a Croqembouche Tower wrapped in spun sugar. One tower is the traditional "puff" filled with Vanilla Pastry Cream. The second tower has the "puffs" filled with dark chocolate ganache. After each pastry puff was filled it was rolled in pearl isomalt providing the iridescent look under the lights.
All of the hours of decorating was rewarded when the bride, groom, and guests saw the cakes. Lots of smiles, hugs, and cameras taking pictures. Thanks for letting us participate in your special day!!
