This was one of all time my favourite memories!
I love teaching, I love connecting with an audience and showing them something new. I always take a lot from each class as an experience myself. This was one of my favourite experiences in teaching, when a student gave me the gift of a bottle of Altos Tequila as a thank you at the end of a 10 week spirits course: Maison by Pernod Ricard.
Three years ago I was the Altos Tequila Brand ambassador for Canada, and the instructor for excellent Maison for the east coast. When I took it and when I was teaching it I was impressed by its breadth and detail. I really hope it, or an updated equivalent, comes back one day soon.
After 10 weeks you tend to form a pretty decent bond with most of your class, and to know one of them enjoyed this so much, and took so much out of it, felt absolutely incredible. This is a great memory.

I’m all for having an ever increasing variety of great tequilas available to consumers: tequilas that are made well with respect and tradition, and that help to improve the category. I’ve been a huge fan of this brand since I first tried it in a seafood restaurant in Guadalajara in 2015 and I’m so excited to see it grow to new markets. Quarantines and lockdowns have taken a TOLL on my tequila collection this summer, and without being able to visit my friends in Mexico to get the special stuff straight from the hands of the makers, my options to resupply have been extremely limited. Happy Mexican Independence Day to you all! As a former serial tequila ambassador, and current tequila mega fan, I’ve been fortunate enough to have had more than my fair share of EXCEPTIONAL Independence Day celebrations, many of which in the home of tequila, Guadalajara. This was three years ago, as the ambassador for @altostequila for Canada, at the culmination of five epic days of learning, development and bonding with a dozen fellow ambassadors and 25 bartenders from around the world at the @tahonasociety global finals - the biggest tequila cocktail competition in the world. This event’s focus on Mexican culture, ingredients and community permanently altered who I am, something ill forever be thankful for, but the people o got to meet, both from Mexico and around the globe was the most valuable takeaway, these are experiences I’ll carry with me forever. This Mexican Independence Day I’ll be drinking a tequila and toasting to you all, and looking forward to the next time we get to meet again!

Never ever ever was there a prouder dad than me right now, watching my boy engrossed in dinosaurs fighting onscreen! A quick side step away from the fact that this is by far the worst of all the Jurassic Park movies and all you’re left with is some gratuitous velociraptor laden violence and one engrossed litre man. And yes that’s a litre tequila sipper on the coffee table, an all round perfect moment!

"Mixto tequilas are legally allowed to be fermented with up to 49 percent non-agave sugars, and most producers use cheap cane sugar". Cool. And although the implication is there, this doesn’t mean that all mixto’s are made that way. TheDailyMeal's comments are a great reflection of the common narrative of tequila. We've been told this simple story for years: 100% agave = good, mixto = bad. But its just not that simple! 100% agave tequilas need to gain 100% of their fermentable sugars from agave sure, but only 99% of the total volume in the bottle needs to be that tequila, the other 1% can be additives, and if you think 1% isn’t a lot, they can be extremely potent! I’ve visited contract distilleries who make the SAME tequila and use that 1% additive window to produce hundreds of individual brands from the same source liquid. According to TasteTequila.com:
“When additives are used, there is no requirement to notify the end consumer, as long as the amount added does not exceed 1% of total volume. For this reason, brands that put additives into their product will often make claims that they are not using any at all. Although this is perfectly legal, it is a bit dishonest.”
Many brands; from local independents to the biggest names, use additives to alter their flavour and mouthfeel. Elon Musk just got his Tesla Tequila approved and it WILL be 100% agave, but will it be authentic? Thanks to TasteTequila.com's new Additive Free certification, this misinformation is about to stop. Now brands that don’t use additives can apply to be scrutinized by this new program, much like the Organic classification, offering an unprecedented level of understanding in a category thats long needed more transparency. Absolutely loved our visit to @artesianbarlondon as we passed through London yesterday. We’d been watching their new 2-ingredient cocktail list in awe for ages so it was fantastic to be able to try it! I love tequila and room temperature cocktails so this was a must do: for me! @drinkfortaleza still strength + COS Pithos Rosso 2015 (a biodynamic Sicilian dry red wine with notes of cherry, prune and dried flowers), the pairing was magical! These drinks are allowed saline, mineral water or plain syrup as additives, but no flavours. Minimalistic genius. Absolutely loved this, well done @remy_savage_ and your amazing team!
