Kombucha (Booch) is a naturally raw, fermented tea beverage that uses a SCOBY (Symbiotic Culture Of Bacteria and Yeast) to produce probiotic properties. Similar to a vinegar, the fermentation process creates small amounts of naturally occuring ethanol, less than .5 percent ABV.
