This one turned out so yummy!! Try this recipe and tell me what you think!
**I didn't have fresh basil, so I added the dried basil instead. I used 1 tsp dried to 1 Tbsp Fresh and it was perfect!

Sausage Rice (Arroz con Salchicha)
I keep trying new types of rice in my Quick Cooker and have been happily surprised that the turn out amazing (I’m always afraid it will be mushy or hard)...
This is what I added:
Mixed Peppers (red/yellow/orange)
Onions
Garlic
Sazon (for color)
4 Hebrew National Beef Franks
2 cups Jasmin Rice
2 1/2 cups Bone Broth
Salt (to taste)

Sautéed peppers, onions, garlic, some garlic flavored oil and sliced franks in the SEAR setting until the onion wilted... Pressed cancel, added sazon, rice, and broth.
Set the cooker to WHITE RICE setting for 5 minutes!

In about 20 minutes total, I ended up with this :)

Cheese-filled Plantain patties with a fresh green sauce... It is to die for!

I boiled 4 green plantain (without the skin and cut in half). After they’re soft and cooled (dont take them out of the pot witb water or they will get hard)... I added the plantain, an egg, some garlic oil and salt in the food processor until it was mashed/blended.
I cut large slices of queso fresco. I oiled my hands and shaped the patties with the cheese inside... I saved them in a container and refrigerated overnight. Later I pan fried them with a little oil.

The sauce... I mixed tomato, jalapeño, green onion, garlic, cilantro, italian oregano, lemon and oil... and chopped!!

You can also make some mayo-ketchup to go with this :)

My new grill meets Sweet Potatoes...  Yumminess Galore!!I bake them whole, slice them and grill them with a little cocon...

Oatmeal “Boats” filled with all kinds of goodies!!
I prepared these and all I do is place them in the airfryer for 5 minutes to warm/toast and then fill them with any combination of things... here are several ideas:
Apples 🍎, Almonds, Cinnamon and Honey
Bananas 🍌 , Peanut Butter and Honey
Mangoes 🥭 & Sliced Almonds
Yogurt & Fruit
Nutella.. and the list goes on!! ❤️

** I added a pack of Enrichables Pea Protein to the mix 😋

Whats new? Tofu 🙂
I have been playing around with Tofu “Bites” on the Air Fryer... and its been amazing! I “drain” the water off a firm sprouted tofu and cut it into pieces (strips or cubes).. I season them and leave them in the fridge overnight... next day I place them in the airfryer for 10-12min (depends on how crisp you want them)... and thats it! Great for snack, appetizer, an addition to salads or to enjoy with a meal... I have left them for a couple days in the fridge without a problem 🙂

seasonings I’ve tried: lemon|pepper|garlic, jerk seasoning, garlic|cilantro|lime

I have been trying new recipes... and yesterday I really appreciated having the Quick Cooker in my life - LOL!!... I CAN COOK RICE AND CHICKEN AT THE SAME TIME!!!! Its a life saver!!!
I just added Onions, red peppers garlic and chicken tenderloins in the pot and poured a can of diced tomatoes on top. On the ceramic pot I added the rice and coconut milk and covered it. I placed the ceramic pot on top of the rack... Cooked everything on the "Chicken" setting and in 25minutes (counting the time I waited for the pressure to go out naturally), dinner was ready!

**One thing I use to make the chicken creamier, I add some cream cheese to the mix after its cooked (especially with the tomato sauce mix)... I added the cream cheese, stirred it and covered it back up until we were ready to eat!

Turkey Meatloaf
This is a super easy recipe that saves the day every time! I bake it on the stone loaf pan and I think it keeps the meat "juicier"... this is how I made it...
2 eggs, at room temperature
2 Tbsp Whole Milk
1 tsp Salt
1/2 tsp ground Pepper
3 garlic cloves, pressed (can use less, based on preference)
3 Tbsp Sun-Dried Tomatoes, drained & chopped
3 Tbsp Parsley, chopped
1/2 Cup Panko Bread Crumbs
1 cup crumbled Fetta Cheese
1 pound ground turkey

I mix eggs, milk, salt, pepper, garlic, tomatoes, parsley and beat with a fork until they're incorporated. I add the bread crumbs, fetta and turkey... and mix with the same fork without "working" the meat too much... Add it to the oiled loaf pan. Bake at 375F for about 45 minutes. Do check that it reaches the 165F before taking it out. Enjoy!

Banana Bread... my specialty - LOL! I make this often... maybe too often... but my Tribe loves it, and so does my neighbor and friends... if you have some ripe bananas at home, try it!
It is super easy and very hard to 'mess up'... you can add nuts, chocolate, coconut, guava... or not, and its still good.
Toppings can be sliced almonds, sprinkle brown sugar, coconut flakes, and just about anything you like.

Quick Cooker Soups...
Yesterday I tried the Red Lentil & Spinach Soup... I had tried it before with chopped spinach and I do prefer it that way instead of this, but its all based on preferences... I did use a small bay leaf (or half of one) since I dont like it to be too strong... do remember to take it out before you add the spinach, otherwise its going to be hard to find - LOL!! Overall its yummy and hearty! I also add Bone Broth to my soups and stews to increase the protein content... Enjoy!

My Journey with Coconut Rice...
My mother-in-law Lina Rankin introduced me to coconut rice. We all love it and I finally found the courage to try it. My kids approved (for being my first try, its great)! From start to finish, it was about 30min. My time was 10minutes and the rest was on the Quick Cooker.
Here's how I did it...
1 cup Unsweetened Coconut Milk (I used Thai Kitchen Organic)
1 1/2 cup Water
2 teaspoons Salt
1 small onion
1/2 Tablespoon Coconut Oil
2 cups Jasmin Rice (washed and rinsed)
Set the Quick Cooker in SEAR for 10 minutes. Added the milk, water, salt, oil and the whole onion, peeled (did not cut it in pieces because I take it out before adding the rice). Stirred the mix regularly so it wouldnt burn. Once it was done, I clicked cancel... added the rice and stirred the mix. Covered it and set it to WHITE RICE for 4 minutes and START... As simple as that!

Not a Total Win but a tasty one...So, I am playing around with the Quick Cooker and RICE.  Not all rice is created equal...

Not a Total Win but a tasty one...
So, I am playing around with the Quick Cooker and RICE. Not all rice is created equal and figuring out how to make it exactly how you like it, is a task. I tried Congri today... It turned out at little "softer" than I like but it tastes sooooo good!!! Will keep working on it (plan on making it again with less liquid).
1 Tbsp Garlic Infused Olive Oil
1 small Onion
2 Garlic Cloves
1/2 Cubanelle Pepper
1 tsp Oregano
1/2 tsp Cumin
1/2 Tbsp White Vinegar
1 1/2 tsp Salt
1 Bay Leaf
3 Sprigs of Cilantro
2 cups low sodium Chicken Stock
1 1/2 cups Jasmin Rice
1 can Organic Black Beans

Chopped onion, garlic and pepper in the Manual Food Processor. Turned the Quick Cooker into Sear. Added the oil and chopped veggies. Cooked for about 3 minutes, added the oregano, cumin, salt and vinegar and mixed well. Turned it off and added everything else to the pot. Stirred it well and set it on the White Rice Setting for 8 minutes. I left it another 10 minutes after it was done and released the pressure manually... and this is how it turned out :)

He estado jugando con el Quick Cooker y ARROZ. No todos los arroces son iguales, y descifrando como hacerlos exactamente como a uno le gusta, es un trabajo. Hoy hice CONGRI. Termino mas mojadito de lo que me gusta pero aun asi super ricoooo!! Seguire tratando hasta mejorarla (la próxima le pongo menos liquido)
1 Cucharada Aceite de Oliva con Ajo
1 Cebolla pequeña
2 Dientes de Ajo
1/2 Pimiento Cubanelle
1 tsp Oregano
1/2 tsp Comino
1/2 Tbsp Vinagre
1 1/2 tsp Sal
1 Hoja de Laurel
3 Ramitas de Cilantro
2 tazas de Caldo de Pollo
1 1/2 tazas de Arroz Jasmin
1 lata de Habichuelas Negras

Corto la cebolla, pimiento y ajo en el "Manual Food Processor". Puse el Quick Cooker en Sear. Añadi aceite y los vegetales procesados. Lo cocine por apron 3 minutos, añadi oregano, comino, sal y vinagre y mezcle bienl. Lo apague y añadi el resto de los ingredientes. Mezcle todo bien y le puse en White Rice por 8 minutos. Cuando termino lo deje como 10 minutos y luego le saque la presión manualmente... Y asi fue como quedo :)

Sabbath Breakfast: Frittata's
You can change the ingredients as you wish but the ratios I used are: 12 eggs / 3 cups Veggies / 1 Cup Cheese / 1/2 Cup Dairy
My recipe was:
12 eggs
Veggies: 2 Tbsp Red Onion, 1/4 Cup Diced Red Peppers, and
the remainder of the 3 cups of veggies I filled with Spinach.
1 Cup Crumbled Fetta Cheese
1/2 Cup Sour Cream
1/4 tsp Pepper
I mixed the egg with the sour cream well, then added all the remaining ingredients.
Added about 1/4 cup of mixture to the Oiled Brownie Pan. Baked at 350F for 20 minutes. If you have leftovers, they can be refrigerated and warmed up for later!

Desayuno del Sabado: Frittata's
Puedes cambiar los ingredientes, si prefieres. Pero las cantidades que use son: 12 huevos / 3 tazas de Vegetales / 1 taza Queso / 1/2 Taza de Lácteos
La receta que use:
12 huevos
Vegetales: 2 Cucharadas Cebolla Morada, 1/4 taza Pimenton Rojo, y el resto de las 3 tazas las llene de Espinaca picada.
1 taza Queso Fetta
1/2 taza Crema Agria
1/4 cucharadita Pimienta
Mezcle el huevo con la crema agria bien, luego añadí el resto de los ingredientes.
Añadí aproximadamente 1/4 taza de la mezcla al molde de Brownies. Hornear a 350F por 20 minutos. Si te sobran, puedes refrigerarlos y calentarlos para mas tarde!

Recipe for today: Air Fryer Crunchy Ranch Chickpeas
1 can Chickpeas (rinsed and dried)
1/2 tsp Olive Oil
Half a packet of Ranch Dip Mix (about 1/2 oz.)
Toss all and place in Air Fryer setting for 15 minutes.
Great for a snack or to toss on salads.
You can make them in any flavor you prefer :)

1 lata de Garbanzos (enjuagar, drenar y secar)
1/2 cucharadita de Aceite de Oliva
Medio paquete de "Ranch Dips" (1/2 oz)

Tremendo para ensaladas o para comer solitos!

Today I tried the Air Fryer Hand Pies. I used elderberry jam that my friend Abigail Tañon got me from Patagonia... they did open up a little (I think its because the jelly was too watery)... but delicious!
However, with the left over dough... I rolled it back and made some smaller "pies" filled with Nutella and OH MY!! I think they lend themselves to fill with whatever your ❤️ desires!

Hoy trate esta receta de pastelitos. Use una jalea de sauco que me trajo Abigail Tañon de Patagonia... se abrieron un poquito pero creo que la jalea es bastante aguada (no muy espesa) pero ricos!
Aunque con lo que sobro de la masa... la volvi a estirar y corte unos mas pequeños y los rellene de Nutella y UFF!!! Creo que esta receta se presta a rellenarlos con lo que tu ❤️ desee!

My favorite and most used Pampered Chef product... PIZZA STONES! I've been making them for a long time (you can tell by the color of my stones 😄)
One different step was Proofing the dough in the QUICK COOKER... which turned out PERFECTLY!!
