Turkey Meatloaf
This is a super easy recipe that saves the day every time! I bake it on the stone loaf pan and I think it keeps the meat "juicier"... this is how I made it...
2 eggs, at room temperature
2 Tbsp Whole Milk
1 tsp Salt
1/2 tsp ground Pepper
3 garlic cloves, pressed (can use less, based on preference)
3 Tbsp Sun-Dried Tomatoes, drained & chopped
3 Tbsp Parsley, chopped
1/2 Cup Panko Bread Crumbs
1 cup crumbled Fetta Cheese
1 pound ground turkey
I mix eggs, milk, salt, pepper, garlic, tomatoes, parsley and beat with a fork until they're incorporated. I add the bread crumbs, fetta and turkey... and mix with the same fork without "working" the meat too much... Add it to the oiled loaf pan. Bake at 375F for about 45 minutes. Do check that it reaches the 165F before taking it out. Enjoy!
