Yes, Good Food Dude offers Poke! Here are 5 Fun Facts about Poke! Poke is and has been one of my favorite foods for a long time

1. Poke (pronounced like “okay”) originated in Hawaii, and means “to slice, or cut crosswise” in Hawaiian

2. Poke began when Hawaiian fisherman would season the extra cuts from their catches and eat them as a snack

3. The traditional fish used in Poke is Ahi Tuna. The inclusion of Salmon was done by the Japanese

4. Poke found in Hawaii looks nothing like this picture! It is typically bought at a supermarket, not a restaurant, and is not very photogenic

5. Poke wasn’t very popular in the mainland USA until 2012, since then, there have been an explosion in poke/Hawaiian restaurants. According to Yelp, in 2012 there were only 67 poke restaurants outside of Hawaii. In 2024, there are OVER 22,000!!!

Ever wonder why buttered toast is so good? Why Olive Oil makes such a good salad dressing? Or why a Filet is tastier than a Chuck Steak? Easy. Because they are incredibly rich in different types of lipids known to us as “Fat.” Fat can come in healthy and in unhealthy varieties, but in our culture we normally recognize them as being unhealthy. the reasons for that are for another post on another day.

Fat doesn’t directly translate to flavor, but when a fat is placed with another flavor compound, it becomes the chemical that allows the transfer of flavor molecules from the food we are eating tothe tastebuds that taste the food. Think of fat as the superhighway that delivers all of these flavor molecules to your tongue so you may enjoy your food. This is why deep fried foods and other incredibly unhealthy foods are so freaking tasty, because they’re loaded with different kinds of fats to make them EXTRA tasty.

Fat concentrates smells and flavors in food. It gives foods a smooth creamy texture that most of us enjoy. Since fat gives us more energy than proteins or carbohydrates, it makes us feel full faster. This makes our brains release hormones that makes us feel content. So even on a scientific level, fat does very much equal flavor. Pay attention to the foods that you eat and consider delicious. That coffee wouldn’t taste the same without a creamer (fat) to accentuate the flavors of the coffee. Wanna make your food taste like that dish from the restaurant? Add a stick of butter. Experiment in the kitchen with different fats and oils, the difference it makes is astounding! Bacon grease, olive oil, butter, and avocado just to name a few!

MSG is a very common seasoning, typically associated with a variety of Eastern Asian cuisines. MSG stands for “Monosodium Glutamate.” MSG is naturally occurring and is found in a variety of cheeses and tomatoes. There are 5 tastes that your tongue can register, those are: Salty, Sweet, Sour, Bitter, and Umami. Another word for Umami that is commonly used is “savory.”

MSG has been very controversial in the past, however, the FDA has recognized MSG as a safe chemical to be used in food. The bottom line is that the myth that MSG is bad for you has been entirely debunked. Any myths that you may have heard have been perpetuated by anti-asian sentiments and xenophobia. After all, MSG is naturally occurring and hasn’t been found to cause any health defects unless consumed in unholy amounts that you will never find.

In 1908, Kikunae Ikeda isolated glutamic acid as a taste substance from seaweed known as “kombu.” He called this taste “umami,” which directly translates to "delicious taste.” Ikeda noticed that dashi, the Japanese broth of katsuobushi and kombu, had a unique taste not yet scientifically described (not sweet, salty, sour, or bitter). This would revolutionize how we look at and perceive flavor.

MSG is an excellent addition to lots of dishes. MSG rich foods include cheese, tomatoes, hot dogs, smoked meats, gravy, bouillon cubes, mushrooms, chips, and most fast foods. Next time you wonder why some of these foods are so addictive, thank MSG!

This one is going to be fun! Many people like to wash their chicken in order to rid the meat of any impurities, get rid of the “slime” and overall improve the cleanliness of the meat. I am here to tell you NOT TO DO THAT!

I know, I know, this is controversial advice. The solid fact of the matter is that washing your meat does absolutely nothing to improve overall quality or cleanliness, and will actually INCREASE your chances of contracting food-borne illness and will even spread harmful raw-chicken bacteria all over your sink, counter, and kitchen area. Not to mention that this will even introduce pathogens from the water you’re using, leading to potential cross-contamination and further reducing the quality of the meat. This is why the health department does not recommend washing any meat prior to cooking, as cooking your chicken to an internal temperature of 165 degrees will effectively kill anything harmful hiding in your meat.

“But Chef, the slime grosses me out and makes it harder for seasoning to stick!” You are totally right!!! Pat your chicken dry with a paper towel prior to prepping, and take it a step further by making a brine of cold water, salt, sugar, and apple cider vinegar as well as your selection of herbs and spices. The sugar and water will serve to embolden the flavor of the chicken, while the vinegar will begin breaking down the collagen in the meat, making it tender and juicy.
