Chicken Taco Soup Recipe
Requested by Tara Kersh Finney

Ingredients:
Chicken Breast
1 Can of Chili Beans
1 Can of Black Beans (drained & rinsed)
1 Can of Rotel Diced Tomatoes & Chilies
1 Can of Whole Kernel Corn (drained)
1 Can of Tomato Sauce (15 oz)
1 Packet of Taco Seasoning
1 Cup of Chicken Broth

Directions:
In a large pot, bring water to a boil. Season with salt and pepper. Once water comes to a rolling boil, poach chicken breast for about 1 minute. (This is a faster method. Chicken can also be cooked in the crock pot. Another benefit to poaching chicken, is that you have homemade chicken broth.)

In the crock pot, add all of the ingredients.
Shred chicken.
Cook for 90 minutes.
Add cheese, sour cream, cilantro, avocado!
Enjoy!
