Happy Valentine’s Day💕❤️Today we are making Rose Levy Beranbaum’s chocolate truffle torte for Valentine’s Day. It is super simple, only has three ingredients, and is gluten free. Let’s get baking!Start by combining 1 pound of good quality dark chocolate and 8 ounces (2 sticks) of room temperature butter in a heat-proof bowl and set it on top of a small pot that has an inch or two of barely simmering water (do not allow the bottom of the bowl to touch the water). Stir this occasionally until it has just melted. Meanwhile, butter or spray the inside of an 8 inch springform pan with cooking oil, line with parchment paper, and spray the top of the parchment. Remove the melted chocolate and butter mixture and set aside. Crack 6 eggs into the bowl of a stand mixer, add a pinch of salt and set over the pot of simmering water. Whisk constantly until the eggs are just warm to the touch. Transfer the bowl to the stand mixer and beat the eggs with the whisk attachment on high speed for about 5 minutes, until tripled in volume. The whipped eggs should be very billowy and light in color. Next fold half of the egg mixture into the chocolate mixture. Fold the remaining eggs until almost no streaks remain, making sure to scrape the bottom of the bowl to get all the chocolate mixture incorporated. Scrape the mixture into the spring form pan.Wrap the outside of the pan with two sheets of heavy aluminum foil and then place the pan inside a larger pan. Fill the surrounding pan with 1 inch of hot water. Put the cake in a 425 degree oven for 5 minutes, then remove it and cover loosely with aluminum foil. Bake for another 10 minutes. Remove the cake from the water bath and let it cool for about an hour. Cover with plastic wrap and refrigerate until firm, about 3 hours or overnight. Unmold the cake and slice while the cake is still cold with a sharp knife dipped in hot water between each slice. It’s delicious as is, but even better if you allow it to come to room temperatu

For those who couldn't make it, we invite you to tour Founder's Hall on February 8th from 10:00 am to 5:00 pm to explore its potential as a venue for your next event. Founder's Hall, recently renovated for hosting events like galas, corporate functions, weddings, and much more, will also contribute a portion of event proceeds to Girard College students (grades 1-12). We encourage you to schedule a visit on the 8th, advance notice is necessary due to school being in session (please email [email protected] so we can expect your arrival) We look forward to sharing this exciting space with you!
