It’s always an honor to be part of life’s big moments. This wedding was planned by the bride’s mother and by the sound of the speeches, she planned everything. You could tell she put so much into making sure everything was perfect. Originally, she booked us for a Big Bear wedding, but plans changed and it moved over 2 hours away. We made it happen. When it came to catering, it had been over a year in the works. We had many conversations, and through those, I painted the picture on how guests will enjoy the food and why. No tasting. Just trust! In our talks and our reviews. And when we gain that trust, I don’t take it lightly. It’s a big deal. I kept all day Saturday open just to make sure everything went off perfectly. This might be the most side dishes I’ve ever made for a wedding. Cooking all the meats on a new smoker. When everything wrapped up, I asked one question: did we deliver? Her response: you certainly did. But honestly, I already knew. I always have the pleasure of guests were walking up mid-meal, raving about the food and coming back for seconds. That’s when you know. The menu was Prime Tri Tip • Pulled Pork • BBQ Chicken • Mac & Cheese • Southern Corn Casserole • Jalapeño BBQ Beans • Pineapple Coleslaw. We did two buffet lines and guests were served fast. Catering a big wedding isn’t easy, but this one felt extra rewarding.
