Just finished a BBQ pop-up for East Valley Water District.
We served over 150 items and kept hearing:
“That’s the best BBQ we’ve ever had here.”

Everyone had their own favorite and truth is, you couldn’t go wrong. Everything on the menu was 🔥3 meats and 4 sides. Wish we took more pictures!

Here’s what we served:

• Mac & Cheese with your choice of 3 smoked meats
• BBQ Parfait — stacked with all 4 of our best sides and your choice of meat

They first tasted our food at one of our BBQ pop-ups… and ended up trusting us to cater their wedding 🔥❤️

Anna & John’s wedding menu was stacked — and even included a vegan option:
• Texas Brisket
• BBQ Pulled Chicken
• BBQ Jackfruit (vegan)
• Mac & Cheese
• Southern Corn Casserole
• Garlic Mashed Potatoes
• Pineapple Slaw

After the wedding, they gave me a personal thank-you card — that was pretty cool!

Friday Wedding up in Big Bear 🌲
The menu:
• Prime Tri Tip
• BBQ Pulled Chicken
• Mac & Cheese
• Jalapeño BBQ Beans
• Corn Casserole
• Pineapple Slaw
• Potato Salad

Crowd favorites? The tri tip (crazy tender) and that corn casserole 🔥
But honestly they came back for seconds no matter what was on the plate.

We usually don’t do this many sides with just two meats, but plates were stacked high and guests were happy.

It’s always an honor to be part of life’s big moments. This wedding was planned by the bride’s mother and by the sound of the speeches, she planned everything. You could tell she put so much into making sure everything was perfect. Originally, she booked us for a Big Bear wedding, but plans changed and it moved over 2 hours away. We made it happen. When it came to catering, it had been over a year in the works. We had many conversations, and through those, I painted the picture on how guests will enjoy the food and why. No tasting. Just trust! In our talks and our reviews. And when we gain that trust, I don’t take it lightly. It’s a big deal. I kept all day Saturday open just to make sure everything went off perfectly. This might be the most side dishes I’ve ever made for a wedding. Cooking all the meats on a new smoker. When everything wrapped up, I asked one question: did we deliver? Her response: you certainly did. But honestly, I already knew. I always have the pleasure of guests were walking up mid-meal, raving about the food and coming back for seconds. That’s when you know. The menu was Prime Tri Tip • Pulled Pork • BBQ Chicken • Mac & Cheese • Southern Corn Casserole • Jalapeño BBQ Beans • Pineapple Coleslaw. We did two buffet lines and guests were served fast. Catering a big wedding isn’t easy, but this one felt extra rewarding.

Both reviews came from wedding events 💒 one a rehearsal, one the big day itself.

It’s always fun being part of the Yucaipa Rodeo. It’s my kind of event 🔥 great people, good vibes, and plenty of BBQ. First event with the new smoker, and it looked right at home next to the booth.

Saturday had good weather, but Sunday was cold, still, the show never stopped. I feel like I’ve got the smoker dialed in now, and every cook is going to be better than the last.

Learning how to build the perfect fire and figuring out which wood gives the best smoke flavor has been key this new smoker really brings that out.

Over the weekend we cooked up:
• Brisket
• Tri tip
• Pulled pork
• Sausages
• Ribs

The rodeo ran two days, and I also had two catering and no better way to break in the new pit and put it to work!

Big thanks to everyone who came out to the rodeo!
I saw some familiar faces and really appreciate the support. Looking forward to doing more events and pop-ups soon—stay tuned, we’re just getting started!

Went to Texas for a new smoker came back with inspiration, stories, and a fire to level up. This wasn’t just a BBQ trip 🔥 Came hungry and left inspired!

• And a new mindset for Tom’s BBQ Pitstop. It’s all about being inspired. 🔥 is burning!
We hit 3 legendary BBQ joints currently ranked #2, #3, and #4 on the Texas Monthly Top 50 list. Any one of them could be #1 next time.

🔥 Truth BBQ
Invited me into the pit room. Got to watch two stages of their brisket process and see a smoker just like mine. When you taste it, you know it’s a labor of love. That’s the TRUTH.

🔥 Interstellar BBQ
The owner shared stories and passion. Chimichurri short ribs? Next level and I don’t even like parsley. He’s not #2 by mistake.

🔥 Burnt Bean Co.
We thought we’d seen it all… then came this spot. Juicy brisket. Cowboy beans. Three sausages and one might be the best I’ve ever had.
I’ve got a strong feeling they’ll be #1 next.
But honestly, all three were some of the best BBQ I’ve ever tasted.

This trip had it all:
Tornado storms. Hitting a deer. Overheating in the middle of nowhere.
One of my competitors came along just so I didn’t have to drive solo 🙏 and when the truck overheated, he swapped the thermostat in 15 minutes. Happy he was able to travel and enjoy the experience as well.

Now I’m back.
Learning the new smoker. Dialing it in. Been talking to mike from and he has really been helping me learn the smoker faster. Past #1 Ribs at the American Royal. Thankful for the help. The smoker came with no owners manual so best info is people already using it.
It’s easy to think your food is already perfect.
But if it’s perfect, there’s nothing left to chase. Sometimes it’s the smallest steps that make the biggest difference. New meats, new sides, and new flavor goals coming your way soon. Already been testing new side dishes. Stay tuned for future pop up with new options. More to come…

“Happy Heavenly Birthday to my mom. Growing up in the food business, she was the one who first got me cooking. While many of the dishes I create now are my own, everyone has to start somewhere—and for me, it all began with her. I don’t have many pictures, but I cherish these. They show me as a kid inside a food stand at the State Fair, already learning the ropes.

And the song on this post? It was our song. It’s a reminder of the moments we shared. I put a lot of love into my food, and I feel she is the reason why. Miss you, Mom.
