Round 2 at the Irvine Costco ✅
Honored to cater a very special retirement lunch and feed almost the whole building this last week.

Congratulations to the GM on her retirement after 40 years with Costco! 🙌
She had us cater for their Costco last year, and let’s just say her last day it was cool to be asked to provide the catering.

On the menu was a “Repeat from 2024”
• Prime Texas-style brisket
• Pulled pork
• Mac & cheese
• BBQ beans
• Jalapeño BBQ beans

We smoked 400 pounds total of prime brisket and pulled pork for this event.

Happy 70th Birthday Greg! 🎉

This was such a cool celebration, beautifully planned by his wife ❤️ you could feel the love in every detail. Very cool center pieces on each table!

What away to arrive to your own party. He came through the airport and taxied straight to the party. Many guests waiting for his arrival.

Mean was prime tri-tip, BBQ pulled chicken, baby back ribs, mac and cheese, corn casserole, jalapeños bbq beans, potato salad, and garden salad. The venue was awesome and the food had the guests raving! What a celebration!

This catering was pretty cool because they found us in Oakglen. They tasted our mac and cheese in Oak Glen and knew they had to bring us to their school. We served 450 students and their families. The menu was Mac and Cheese with BBQ on top, BBQ sandwiches, Jalapeño BBQ Beans, and Pineapple Slaw. By far the most popular was the Mac and Cheese with BBQ on top. Next time we will make more mac and cheese.

All because of one birthday wish.

Today I had the honor of providing a BBQ feast for some amazing federal employees that are affected by the government shutdown.

My wife didn’t want any gifts for her birthday. Instead, she said, “If you really want to get me something, I want catering for my coworkers.”

With the government shutdown, she wanted to do something special for her team. That was one birthday wish I could make happen.

It turned into a true feast 🔥 Prime Texas-Style Brisket, St. Louis Ribs, Pulled Pork, Mac and Cheese, Jalapeño BBQ Beans, and Pineapple Slaw.

A meal to remember ❤️ all because of one birthday wish.

🔥 This past weekend we were part of the Cornerstone BBQ Bash!
A legit BBQ event in the IE… and it’s only gonna get bigger. 🍖🔥

✨ First year doing it, and I’ll be back.
When everyone’s serving BBQ, you gotta stand out. Next year I will know what to expect.

Day 2 👉 switched the menu.
The heat broke.
Crowds came hungry.
We got slammed.
By the end of the night… SOLD OUT and even BOOKED CATERING 🙌

I’ve wanted to do this event for 2 years, but every time I was already booked. This year I kept the date open — glad I did. 💯

Met some awesome BBQ folks, connected with the community, and brought the flavor. We served up a nice menu Even though I came back from vacation just days before (😅), it all worked out.

Already looking forward to next year 🔥 If I can keep the date open, we’ll be back with even more 🔥

We always ask the vegans how the food was but when they come back for seconds (and thirds), that tells us everything.

We had the honor of catering a beautiful retirement party at The Pond in Redlands. A stunning venue. The menu featured Texas brisket, BBQ chicken, Tom’s mac and cheese, loaded tater tots casserole, jalapeño BBQ beans, and peach cobbler. 🔥

The feedback was nonstop. Guests said it was the best brisket they’ve ever had. Even the bartender, who samples food all the time, said it was the best they’ve tasted. The host told us she was so glad she chose us for full service and said the food was outstanding. Her husband was still raving about it the next morning. They planned this beautiful retirement party and chose us based on our reputation. That is what its all about. Very rewarding! Especially when so many walked up and told us how they enjoyed the food.

We’re proud to now be on the venue’s preferred vendor list, something we’ve always aimed for. At Tom’s BBQ Pitstop, we put more into our food 🔥 and you can taste the difference. One bite is all it takes. But trust me you will want more….
