Was honored to be asked to feed the employees at Americana pizza as they are excited to be back in business soon. I did brisket (which that bark was off the hook) pulled pork, cheesy potatoes and Mac and cheese. The pork tenderloins were for myself and they turned out great, very moist and tender. Used a combination of apple and cherry wood. Basted with Hey Grill, Hey by Susie Bulloch Apple jalapeño bbq sauce.

Dinner for/with loved ones turned out great . Brisket smoked for 12 hours or so . Cheesy potatoes beans along with homemade smoked peach cobbler . We broke out the good plates for this .

Busy weekend catering a wedding. For cocktail hour we did close to 400 smoked meatballs, along with a cheese, veggie and fruit trays. Dinner consisted of 5 briskets, 14 whole birds, 11 pans of cheesy potatoes, 7 pans smoked beans, along with 3 roasting pans of green beans. Served over 200 with several “helping themselves “ to a 2nd and even a 3rd plate. Huge shoutout to my team for your help, as always, you killed it! This isn’t possible without you, much love! Overall it was a great evening other than a few A holes who felt entitled. Not everyone has class.

Been a busy week. Elk’s Wednesday, fed a group of workers lunch at a local factory Thursday then a wedding yesterday. All this and sadly lost my father in law Tuesday.

Private event today, this brisket turned out fantastic. Everyone loved the brisket, cheesy potatoes and beans. We’re still rollin smoke for your event, just let us know when you need a foodgasm!!

Been a while since I've posted but without details, I'm back & working out some details for the future. Don't ask, don't guess what is next, cause I don't even know (BTW, it doesn't involve me walking away from my full time & doing this FT) I will say, this past 6 weeks has tested me & I'm smiling & looking forward to the future. At the Elks Club #649 tonight 6-8. Ribs and Brisket with cheesy potatoes, beans and slaw. This might be the last time for the summer as they’re changing things up for the golf season. I’ll still be there from time to time just changing up from sit down meals to more sandwiches.

Here we are May 1st and we’re getting close to graduation parties. Weather you choose us or not please don’t wait to get your caterer lined up. I’ve booked four parties since Wednesday, the month of June is quickly filling up, speaking from experience, the shorter the notice to your caterer the higher your price will be.  Can only speak for myself when I say if you go with us, you’ll have nothing to worry about with the food

We’re back at the Elks tonight. This is open to the public. Sean Lamb and Janet are doing an acoustic set starting at 6. Bacon wrapped smoked meatloaf and pulled chicken W/ smoked beans, cheesy potatoes and white cheddar Mac and cheese. $15 can get it to go or stay and enjoy the music.

I said the other day that news was coming. Firstly though, I want to let you all know that we nailed it at the Elks Wednesday evening & have been asked to return on February 1st & 15th. On the 1st, I'll be doing two proteins, pulled chicken & smoked meatloaf. Haven't decided on the 3 sides yet, but thanks to all for commenting, one of them with be roasted garlic smashed potatoes. If you've got a thought on the other two sides, please chime in. I haven't decided about the menu on the 15th but I can promise you it's nothing I've ever sold before, expanding from only doing smoked meats, hence the news that our menu is expanding to include new options just don't ask for no tofo! Some of you will be my guinea pigs as you'll be asked to taste test said menu items as long as you give me your honest opinion. Thanks for all the support & god bless

Evening everyone, have some news coming shortly, but for now, I want to ask your opinion: When having homemade mashed potatoes, REAL potatoes, (not the instant ya get in some restaurants) Do you have to have gravy or would you be happy with a flavorful mashed potato on it's on as a compliment to your protein? Please, if you have to have gravy, which in my opinion is served best on biscuits. lol please respond yes, if you're happy with potatoes alone, respond no. If you have more than one in your household & you're the only one who likes my page, go smack them upside the head! JK, don't want to go to FB jail again. Anyway, let me know in the comments how everyone in your household likes their potatoes.
