Chef Catlin Carpenter, hailing from the vibrant city of Grand Rapids, Michigan, discovered his passion for the culinary arts at a tender age of 15 while working at his parent's restaurant. This early exposure ignited a flame within him, prompting him to pursue formal training at the esteemed Secchia Institute for Culinary Education. Eager to broaden his culinary horizons, Carpenter embarked on a journey across the Midwest, immersing himself in the diverse culinary landscapes, particularly the ski resorts of Colorado, where he honed his skills and absorbed the essence of mountain cuisine.
Upon relocating to the coastal shores of Florida, Carpenter seamlessly integrated his newfound expertise with the region's abundant seafood treasures, creating a harmonious fusion of East Coast flavors and Rocky Mountain influences. His culinary creations reflect a marriage of land and sea, encapsulating the essence of both coastal freshness and hearty mountain fare. With a culinary philosophy that celebrates the intersection of diverse culinary traditions, Chef Catlin Carpenter continues to captivate palates with his innovative menus, offering a tantalizing journey where the sea meets the mountains, and East Coast embraces West Coast.
Dating back to 1879, Sinegal Estate is right in the heart of Napa Valley, at the base of the gorgeous Mayacamas Range. Known historically as The Inglewood Estate, the 30-acre retreat is one of Napa’s oldest and most coveted. Our unrivaled property had some of the first vines planted in the valley in 1881.
Sinegal takes a field-first, micro farming and fermenting approach to winemaking with an unrelenting eye to detail. Using state-of-the-art equipment to test and analyze grape quality, they take a science-forward approach to ensure that only the finest fruit makes it into our barrels.
