When discussing U.S. barbecue, many people often envision pulled pork and ribs. However, smoked chicken, prepared using the low-and-slow technique, offers a unique and flavorful alternative.

Our Pitmasters begin by brining the chicken to enhance its moisture and flavor. They then smoke it for several hours over charcoal, allowing the meat to absorb rich, smoky flavors.

A key aspect to note is the appearance of a pink smoke ring in smoked meats, such as brisket. This does not indicate undercooking; rather, it is a result of the smoking process. We ensure that all our chickens are thoroughly cooked to an internal temperature of 180 degrees before serving, guaranteeing both safety and quality.

For those curious about the science behind this phenomenon, it involves a protein called myoglobin, found in muscle tissue. When myoglobin interacts with moisture, it takes on a pink hue. At high temperatures, myoglobin typically breaks down, resulting in a uniform white color. However, our method of smoking chicken at lower temperatures for extended periods allows some myoglobin to remain intact, leading to a pink tint in the meat. This reaction is similar to what creates the smoke ring seen in brisket and ribs.

So, the next time you encounter pink chicken, rest assured it's perfectly cooked and enjoy the delicious flavors it has to offer!
