The perfect food to eat with hot chocolate? Tamales. You can see tamales have been accompanying chocolate for a long time in this Mayan Codex. They are circled below the man not sharing his foamy cup of chocolate. Tamales are hard to come by in the UK but makes delicious tamales. Sometimes and I have tamale parties with neighbors at my house.
See the Mayaglphs at the top? Easy to identify is about the Mayans. To look at codex about the Aztecs, the scanned the Codex Mendoza. It’s divided in 3 parts. Rulers. Tributes. Everyday life.

Soconusco cacao is well known. Do you know the origin of the word? comes from the Nuahuatl word XOCONOSTLE which is a sour cactus fruit. The Aztecs called the area Xoconochco, meaning ‘Place of sour cactus.” There is a xoconostle in the hands of Thomas, owner of outside of San Miguel de Allende, Mexico. They are sour and still put into salsas and puts them in some of their chocolate bars when available. is a great place to learn more.

Our teachers
taught us many things but most importantly, to think critically.
1. Be a know a lot, not a know it all.
2. Context is everything.
3. Origin is a powerful word.
4. Question everything
5. Current findings are current findings. New discoveries and understanding happens all the time. Keep learning.
6. Trust Mother Nature
7. Don’t just repeat oft heard narratives in chocolate. Are they true? How do you know? What are your sources?

And I left thinking about how can better market.

We had a gorgeous view of the ocean and a table full of food but none of us could be pulled away from the discussion on ethics, politics and oft repeated narratives in chocolate. The class and discussion expanded my mind and inspired me to do better with critical thinking.
They encouraged us to be know a lots not know it alls.

I’m slowly releasing my meme series on
I use these in my brief history of chocolate class. Doesn’t it look like the person grinding is listening to podcasts on headphones? Jenny said that in parts of Ecuador she has seen cacao still used as currency. When an ambassador from the USA went to Mexico in the late 1800s, he saw many people using cacao as currency. The Spanish might have changed a lot when they arrived but they didn’t change the use of cacao as currency. has more on that.
I was inspired by friends in one of my chocolate classes to start writing these.

We will be having a very informal chocolate tasting Friday night at The Cacao Circle 2 Bedford Street Stroud. This is a small alley behind the Sub Rooms in Stroud and off the high street on the other end. Parking near the St. Laurence Church or the 5 Valleys lot.
I will also be selling my book for those interested.

We will be digging into my chocolate vaults and having fun tasting a lot of different chocolate.
