Good morning
This week Thursday we are doing brisket, pork ribs, turkey.
We also have pickles, pickled onions and pickled okra for sale.
Brisket and turkey will be $15 a pound and the ribs are being sold $15 for a half rack.
The pickles are being sold by in small sealed bags for $4 each.
Delivery $5 and pickup around 2 at the Jim's on hildebrand and San Pedro.

This week we are going to do beef back ribs and pork tenderloin. Tenderloin will be $15 each and beef ribs half racks $15 each. The half rack ribs come normally with 3 to 4 ribs. Tenderloin about 1 pound normally.

Thanks everyone who ordered last week. I put a text out to the regulars sorry for not posting what we were doing. We did turkey breast which is always good. Also we turkey legs and whole chickens.
There is also a picture of some bacon we cured. Bacon needs a little work before offering it to yall but it is coming.
This week, Thursday, BRISKET is back! We are also going to do some pork butts.

Today my oldest daughter had her national junior honors society ceremony. She has and continues to exceed anything I have ever done in school. She is a smart and clever young lady. We are so proud of Isabella not just because of her brain but also her heart. I can not wait to see what the future holds for such a special girl.

In these times it is hard to be grateful for our time at home with 90 percent of time being spent there.
I am grateful to have this time with my family and my garden. I have the same opportunity to watch my two daughters grow and mature, right in front of my eyes.

Real simple to cure but easy to over do.
8oz salt
4oz sugar5oz pink salt
I used 2 ounces of this mixture for a 5 pound slab of pork belly. I sliced a jalapeño and added it to the pork party. Cryovac, seal and put in refrigerator. Flip for 3 to 5 days untill firm. Rinse and smoke.

Next time I will work the dough for a few minutes before the over night chill proof. Also I will try two days chill proof.
