Celiac Disease- An immune reaction to eating gluten, a protein found in wheat, barley, and rye.
Over time, the immune reaction to eating gluten creates inflammation that damages the small intestine's lining, leading to medical complications. It also prevents absorption of some nutrients (malabsorption).
It can be just a slight sensitivity, or a potentially life threatening allergy.
My daughter, who is also our employee , has Celiac Disease. She was diagnosed 16 years ago, and we have probably tried every product that has been made. It was not as common back then as it is now, so we kind of grew up with it. The separate dishes, toaster, utensils, not to mention cooking special food etc. As I have that child who was severely sensitive. In turn, I have researched and read numerous information as to how to control it in my household.
As with every allergen, cross contamination is the number 1 reason people find themselves feeling ill after eating outside of their controlled environment.
A restaurant or eating establishment may state they have gluten free products etc. but if not prepared with proper protocols, it will be for not.☹️ Ultimately, the only way to be perfectly gluten free, the eating facility has to use 100% gluten free products throughout the entire establishment.
With the limited space on a food truck, you have to be extra cautious on your preparation. We have experience with Celiac Disease, in our family, so we decided we wanted to offer a gluten free bread product to our fine customers.
So, starting today we have gluten free bread for burgers and toasties. 🥰🥰. It is an upcharge, but anyone who has to eat this way, I’m sure are well aware. Most customers are excited to have an option. 😊
It will be a $1.00 upcharge for a gluten free burger, and a $2.00 upcharge for a gluten free toastie. It will be prepared with the utmost precautions possible, as it hits home for our family, as now Big W***y, our co-owner, chef, and all the other hats he wears, has been blessed with the wonderful disease. That is two of our four employees with the disease, so we will all make it our mission to present your food gluten-free.
