First Prime Rib of the season is up, this is gonna be a busy one. My old Fresno cowboy buddy Stony O’Neill from taught me this setup over two decades ago (RIP bud). Garlic, Thyme, seasoning, cracked pepper and brown mustard puréed with olive oil. The key is to marinate it overnight tightly wrapped in plastic then another uncovered to make it nice and crusty. Cast iron from the Pack Station cookhouse itself is the garnish. Hello Holidays 2023, let’s go!!!!
