Sous vide and grilled T-bone, smothered in mushrooms and pears in a fig vinegar, wine, and cream reduction
Colcannon with garden kale and walla walla onions we grew and finished with sage
Artichokes stuffed with quinoa from the harvest, blistered cherry tomatoes from the vine with pineapple sage

Josh made a polenta cake with fresh pears and a earl grey oat cake both with sweetened yogurt, mulberry jam, and whipped cream

That’s how you do a harvest festival

I know, I know…I’ve been a man of a million different launches, and I only recently started pushing on

So why are you all of a sudden seeing rustic earth posts here? Because I’m integrating. I’m exhausted of all my endeavors being separate, because I am all of them.

I love food.
I love energy work.
I love sound.
I love movement.
I love community.

These all together are what makes me…ME! What makes me prance…what makes me sparkle…and what just brings me joy.

We’re still taking catering clients through The Prancing Chef, but I’m still devoting much of my time to ECHO, but to keep myself balanced I MUST keep my movement, sound, and more.

So thank you, fans of my food, friends, family…thank you while I figure out what this integration looks like.
