It’s a different thing to cook a meal using donated ingredients, garden-grown delights, and a dash of prance. 🌿

Day two at had me emotional over cheese and bean enchilada casserole. Not because it was fancy - but because it was intentionally used. Nothing wasted. Every bit chosen. Every bite nourishing.

Cooking at ECHO is already changing my relationship with food. After years of burnout in the food world, this feels like a soothing salve. A return to why I started cooking in the first place.

At ECHO, my goal is to practice intentional use - making thoughtful, respectful choices with every ingredient. Whether something lands on a plate, enriches our compost, or is passed along to our outreach, it’s all considered. It’s all honored.

More updates coming soon as I grow the Workforce Development program, shape new menus, and — most importantly — keep putting hot food in people’s bellies.

Two of my favorite techniques, side by side on one plate.

A 48-hour sous vide tri-tip — impossibly tender, kissed by fire just before serving. And a roasted salmon mi-cuit — just barely cooked through, buttery and delicate, the way salmon dreams of being.
