Two words: Meat Candy.

Smoked some Pork Belly Burnt Ends for the fam last night, and these turned out incredible! Seasoned with a mixture of Honey Killer Bee and Holy Cow. Smoked on the at 250 for about two hours, and then tossed in a foil pan with brown sugar, butter, honey, and some sauce. Covered them with foil and let them ride for another two hours. After they were good and probe tender I took them out of the pan and back on the grates uncovered for 30 minutes to get good and sticky. These were so good, absolute meat candy!

Garlic Butter Smoked Shrimp!

This is a super quick and delicious addition to Steak night in our house. I marinated the shrimp in a mixture of worchestershire sauce, minced garlic, and some 214 seasoning, and let it sit in the fridge for about an hour. Once the steaks were resting I threw an artery clogging amount of butter into my favorite cast iron along with the shrimp and topped it with more of that delicious 214 seasoning and on to the bronco it went. With the charcoal basket moved up and the fire ripping hot these were done in a flash. SO good! Be sure to grab some of those they have got it going on!

A few nights in the camper called for the 14in smokey joe. The perfect grill for these big Prime USDA Ribeyes. These definitely didn't suck! Hot and fast on the Smokey joe, seasoned with holy cow, over and mesquite. How do you like your steak? Medium Rare for me!

Some pre 4th of July, practice runs on the infamous party style rib cook. I was skeptical, but I think I'm a believer now! Smoked on a bronco with pecan and charcoal and seasoned with a mix of original seasoning and Raspberry Chipotle, and glazed with some of that Raspberry Chipotle sauce at the end of the cook. They turned out great!

I love smoking big briskets, slabs upon slabs of ribs, sausages and all the meats. But something i will never get tired of is taking something as primal and traditional as woodfire cooking and elevating it to the best of my abilities. I love Barbecue purism, but i also love to see boundaries pushed and rules broken. .

This recipe is simple. Far from complicated, but yet Absolutely divine. Just like barbecue.

Quick Tri-tip tacos & Chimichurri for lunch. After all the holiday food the last week I was in need of something different. Tri-tip smoked on the bronco with mesquite and seasoned with my favorite Holy Cow. Top the tacos with some bangin Chimichurri and a little and I am ready now to enjoy a nice food coma. A little light work for the bronco today. Two pork butts rubbed down with gospel and some cheddar brats for the fam. The bronco is such a versatile machine with room for just about anything you throw at it. By far one of my favorite pits! We filled and lit the basket at about 4:30 this morning and it was still holding 250° strong when I pulled the butts off at 3:30 this afternoon.! Talk about efficient! Anyway, it’s been a good Saturday amigos, hope everyone is having a great weekend and happy early Father’s Day to all you kick ass dads out there!

• The Carne Asada Street Dog came into fruition today after pondering on how to turn the Memorial Day cook out up a notch. Hot dogs and tacos are the PERFECT on-the-go foods. So why not combine them?!

Polynesian pulled pork sammies with a pineapple jalapeño slaw. So. Damn. Good. Pork butt smoked over pecan and post oak on the bronco. Whipped up a quick jalapeño and pineapple slaw to go with it and washed it down with several cold adult beverages.


• pork butt seasoned with gospel and smoked at 275° with , post oak and pecan until around 200° IT. Loaded down on a toasted brioche bun with a quick pineapple and jalapeño slaw and topped with some chik-fil-a Polynesian sauce. I’ll definitely be doing this again!

Smoked-Fried PB&J wings. This flavor combo for wings sounds wrong in so many ways but let me tell ya, SO Addicting. Huge shoutout to for the recipe, as soon as I saw it I HAD to try it.

Wings seasoned with sweet and spicy bbq rub and smoked on my offset with a blend of and pecan. Smoked until they were around 160° internal and finished off in the cast iron full of peanut oil to get that skin crispy!

For the sauce
• 3 Tbsp creamy peanut butter
• 3 Tbsp Strawberry Preserves
• 3 Tbsp Soy Sauce
• 2 Tbsp Thai Chili Sauce
• 2 Tbsp minced Garlic
• 3 Tbsp Honey
• 1 half stick of butter.

Melt all the ingredients together in a small cast iron and let it thicken just a little. As soon as the wings are don’t pour sauce over and toss together garnish with peanuts and green onions. Make sure you have something cold to wash it down with!

Nothing better than some Sunday night Football, a cold beer and some Bacon Wrapped Onion Rings to munch on. These are so easy and so good. Bacon + onion + your favorite rub (I used Head Country Bar-B-Q] ) glazed with your favorite sauce. (also used Head Country Bar-B-Q] for this). Couple hours on the pit at 250° and you’re ready to go. Allow me to introduce your new favorite appetizer! I’m not even kidding these are in my top 3 of favorite things I’ve ever made on my smoker.

Jalepeno Cheddar and Cream Cheese stuffed bacon bombs.

1 block cream cheese
1 cup of sharp cheddar
Diced pickled Jalepeno to your likening.
Favorite bbq run (I used king Louies Huney Chipotle)
Ritz crackers
Bacon.
And bbq sauce to glaze with (if you choose)

1. Mix all cheese, jalepenos, and bbq rub together

2. Make cracker sandwiches with cheese mixture

3. Wrap crackers in bacon. I use one piece for each cut it in half and wrap both ways.

4. Smoke at 250° for two hours and glaze the last 15 minutes.

5. Thank me later! So so good. And so easy. 🔥
