This couldn’t have worked out better! And it’s tender deliciousness. Now we know we can do this in the big smoker with 3 different sizes at once. Left it wrapped and refrigerated for 2 days. Chill than slice. All moisture is retained. Reheating shouldn’t be an issue if the cooks are any good.

Hey! The briskets are coming off! This is sooner than we expected. Now I’m going to make a brisket broth for some moisture. after the brisket is chilled, we will slice it thin and add some seasoned broth for reheating purposes. 🙂

Ps. You’ve got to appreciate he got up at 4:00 am to wrap these.
