This traitorous twist on the classic Caesar Salad will energize and fuel you to keep going toward nutrition. In this recipe we swap out store bought croutons with some toasty Ciabatta bread, add in avocado, red onion, and a bold slice of tomato. The real stars of the dish though are the pan seared chicken breast and the perfectly poached egg! Combine all that with a delicious yogurt based Caesar dressing (I would recommend Panera Bread or Bolthouse). Get it all on a plate, mix it together, and enjoy!
Primary Ingredients
- 2 cups chopped romaine lettuce
- 3 oz portion boneless chicken breast
- 2 tbsp Caesar dressing
- 1 large egg
- 2 medium slices ciabatta bread
- 1 medium slice of red onion, sliced again in half
- 1 large slice of beefsteak or big boy tomato
- 1/2 ripe avocado sliced thin
Directions
1. Brush olive oil on both sides of the ciabatta bread slices and sprinkle with garlic powder and oregano. Toast until crispy. Set aside to cool
2. Season chicken breast with a little bit of salt, black pepper, plus parsley, sage, rosemary, and thyme (cue Simon and Garfunkel!).
3. Pan sear chicken until internal temp reads 165 degrees, remove chicken from pan and let rest at least fives minutes.
4. Boil water in a small pot or skillet, add egg and poach. Remove egg and dry on paper towel.
5. Assemble salad ingredients in a bowl or plate. Add Caesar dressing.
6. Enjoy!
