Oxtail, Rice & Peas, and Caribbean Coleslaw

Oxtail used to be the "throw away" part of the ox by many countries except those of the Caribbean.The feet, tripe,skin, tongue, liver and widely used in Caribbean cuisine.Oxtail is now considered a delicacy as the price per pound has skyrocketed over the years.

Oxtail being a part of Caribbean cuisine dates back to slavery where slaves were given scraps from the animals to fend for themselves. These "scraps" are still prominent in Jamaican cuisine.

Oxtail is mostly enjoyed slow cooked in a delicious stew, but it can be used in soups, curried, like I've seen done by Thatnursecancook, shredded and used in tacos, boiled and used as a stock, braised in wine, the fat can be rendered off and used in other meals for frying etc.

Method-Browning the oxtail

This can be done on the stove top on medium high, brown each side until tge desired color is achieved, the flip and repeat. This can also be done in the oven on a baking tray by broiling the meat on each side until the color is achieved. My grandma taught me that years ago and when I'm in a hurry that's what I do. Both methods work!!!!
