HOMEMADE CRUNCHY GRANOLA 🌳 If you like crunchy, nutty, cluster-y granola, this is your recipe! It’s perfect for yogurt parfaits, ice cream, pie topping, or by the handful! Allow me to opine on the ways this easy, homemade granola is superior to store-bought: 1) it’s fresh — you made it! 2) it’s customizable — use your favorite seed/nut combo 3) you control the ingredients — it uses unrefined oil, is naturally sweetened, and gluten free.

2 cups old fashioned oats
2/3 cup pumpkin seeds*
2/3 cup pistachios*
2/3 cup pecan pieces*
1/4 cup unrefined coconut oil
1/3 cup honey
1 tsp vanilla
1/2 tsp salt
*You can use virtually any combination of nuts and seeds, totaling 2 cups.
Preheat oven to 300F. Line baking pan with parchment paper. In a large mixing bowl, combine oats, seeds, and nuts. Scoop coconut oil into a microwave safe bowl, and heat in the microwave just until melted (about 1 minute). Whisk the honey into the melted coconut oil, and microwave for 30-45 seconds. Add vanilla, stir. Pour the honey mixture over the oat/nut mixture and stir until coated. Sprinkle with cinnamon, salt and mix again. Pour granola mixture onto baking sheet, spread into one even layer. Bake for 30 minutes. Let the granola cool completely before breaking apart. The granola will get crunchy as it reaches room temp.
