By law, Scotch Whisky must be distilled and matured in Scotland using only three raw materials – cereals, water, and yeast. Scotch Malt Whisky must use 100% malted barley and be distilled in a pot still. Grain Scotch Whisky is normally made from unmalted cereals (usually soft winter wheat or maize) with the addition of around 10% ‘high DP (Diastatic Power)’ malted barley and is typically distilled in a continuous column (patent) still. ‘High DP’ barley will normally exceed 1.80% nitrogen to achieve the required level of enzyme activity for conversion of the whole mash to fermentable sugars. Grain Whisky is mostly commonly used as a component part of blended Scotch Whisky, which accounts for around 90% of all Scotch Whisky sales. Distillers normally obtain their malted barley supplies under contract from commercial sales maltsters.

Barley is a plant similar to wheat but is hardier, growing well in a cool temperate climate. It is normally germinated and dried to produce malted barley, sometimes called ‘malt’. Barley malt is useful for distillers because:
• It can make a significant contribution to the flavor of whisky; and
• It is a good source of enzymes which convert starch to sugar.

One possible way to measure the efficiency of whisky production is by looking at the ratio of output to input, or how much whisky is produced per unit of grain. The grist to liquor ratio is about 4:1 in terms of liters of pure alcohol (LPA) per kilogram of malted barley. This means that for every kilogram of malted barley used, 0.4 liters of pure alcohol were produced. However, this ratio can vary depending on the type and quality of the grain, the distillation method, and the yield of the fermentation process.

Northside Distilling Co. is teaming up with the Cincinnati Association for the Blind and Visually Impaired to release a bourbon for the visually impaired. The limited-edition bourbon is packaged in hand-numbered bottles that have braille on the labels. The bourbon itself is a 108-proof single-barrel bourbon aged for 6 and 1/2 years.

The latest survey by Japan’s Ministry of Health and Welfare (MHW) found that an estimated 67 percent of the population drink, and almost 2.5 million, or about 2 percent, are alcoholics or heavy drinkers. The Japanese define a heavy drinker as someone who drinks the equivalent of 150 ml or more of pure alcohol a day. (In the United States, alcoholism affects about 12 million men and 4 million women.) Apart from patient surveys, no other sources are available to calculate the percentage of problem drinkers in Japan.

Chivas Brothers announced plans its first distillery on the isle of Islay. The distillery, which will be located on the site of Gartbreck Farm, west of Bowmore at Saltpan Point on the shore of Loch Indaal, will enjoy stunning views facing Bruichladdich and Port Charlotte across the loch. Once operational, its production will focus on Islay single malt, celebrating the region’s distinctly smoky and peated profile.

Whisky believed to be distilled almost 200 years ago has been found behind a hidden cellar door in Blair Castle in Perthshire, Scotland, a 750 year old castle. Thought to be the oldest known Scotch whisky in existence, it will soon be offered for sale at auction.

Make your Dram For The Weekend a Port Charlotte Islay Barley 2013 this week, to celebrate a successful harvest here on Islay.

After a cool wet summer, a strong week of sunshine in September saw the majority of our local farmers bringing in their barley, as the grain dried out enough to be harvested. Moisture levels are key for safely storing the barley before malting - you want the kernels to sprout on demand, in the magical process that produces the sugars (and smoky flavours) we then convert into our heavily peated Islay single malt.

Whisky is agriculture!
