Ever wonder why the smoked chicken you get from other places is dry?

Because they don’t brine it.

Chicken dries out quicker than any other protein, unless you give it a little love like we do with ours.

~48 hours in a salt/soy sauce/brown sugar brine, hit with our dry rub, then 4-5 hours over a hickory smoke bath @ 240.

Out here for one last late night smoke sesh at THE BATTLE WAGON reflecting on the last 2 years, and what a couple years it’s been.

Shoutout to our wives for not killing us and let’s be real, without either of them the food wouldn’t be this good. Especially the PUDGE MUFFINS.

Shoutout to the wonderful people at Stonehenge Golf course that took a chance on a 20-handicap dude who just wanted to eat good brisket and play a little golf. I appreciate you all more than you’ll ever know.
