Autumn is my favorite time of the year! Pumpkin spice everything please! I love when the leaves on the trees begin to change to shades of amber and red. However, the beginning of fall also means it’s time for me to say good-bye to my outside garden. I grow tomatoes and a wide variety of vegetables and herbs every spring, and by September I usually have green tomatoes still on the vine. But, instead of taking a chance that they will ripen, I pick them and make jars of Kentucky Chow-Chow. Whether, sweet, tangy or spicy, the flavor of these pickled tomatoes is an excellent accompaniment to so many dishes. As a child, my grandmother would can jars and jars of this Kentucky favorite. I used tomatoes and onions in this batch, but in all honesty, Chow Chow can be made with almost any left over vegetables in your garden.
