I am an avid lover of food, a home cook for 25 years, and have 10+ years experience with seafood boils and BBQ, including 4 years of competition BBQ as a part of Team Deadpork at Hogs for the Cause. With an array of original spice blends, (award-winning) sauces, and recipes on hand, we'll be exploring a multitude of culinary cuisines from New Orleans staples like jambalaya and red beans, to Buffal

o's chicken wings, to Sicily for the best red sauce you'll ever try, and everything in between. I've been fortunate enough to receive some incredibly high praise for my culinary offerings, especially over the last ten years. After some very persistent persuasion from friends and family, they have finally convinced me to share my passion and love for good food with the world. It’s game day, y’all!! As a shout-out to the Chiefs, we’re doing some KC style pulled pork to go with cabbage slaw and sweet potatoes. Pat pork butt dry and lather with yellow mustard (this will allow your seasonings to bind to your protein more easily). Season generously all over with Sweet Rub and let sit for 5-10 minutes. Place in smoker and cook at 275F, spraying with apple juice every hour, until mahogany color has set in and bark has properly formed, roughly 4-6 hours. Place pork butt onto two layers of HD foil and spray w/ apple juice; sprinkle another coating of rub all over. Tightly wrap in foil and return to smoker. Continue to cook for another 2-4 hours, or until internal temp reaches 195F. Remove from smoker and let rest 30-60 min. Carefully open foil and remove blade bone (this will come out cleanly when cooked properly). Shred/pull pork by hand, removing any excess fatty pieces as needed. Sprinkle with seasoning once more and toss in juices to combine. Serve with your favorite bbq sauce on the side... I recommend the Sweet-n-Spicy Sauce, of course... 😉 Enjoy!! Happy Gameday! Finally had a chance to get back at it... I’ll admit that I was a little rusty, considering I haven’t done this big of a cook in a few years, but the end result was still pretty damn good. I was on a bit of a deadline, which unfortunately prevented me from taking any decent pics of the sides, but I’m still proud of the offerings. A MASSIVE shoutout to my wife/sous-chef , as this surely would not have happened on time without her help!

Full menu is as follows (all homemade rubs/sauce):
BBQ smoked pork butt
BBQ smoked turkey
Savory lemon pepper smoked turkey w/ sage & rosemary
Green bean casserole w/ mushrooms & gravy
Garlic rosemary mashed potatoes
Mustard/turnip greens w/ onions & bacon
Savory corn grits casserole w/ andouille

I’m back in the saddle again now though! If you need a holiday feast, or even just a night off from cooking for the family, hit me up!

Greetings, all! I hope this is treating you well. I wanted to reach out with an update: You may have already seen some of the page updates come through. As I am no longer with Sunpro Solar, I am starting a new endeavor and have changed the focus of this page. After years of persuasion by friends and family, they have finally convinced me to start my own catering business. We still have some things to finalize, but the wheels are in motion, and things will be fully up and running soon enough. Custom menus are available for events both large and small, casual or formal. I also have a line of spice blends and sauces available for purchase. So, if you like good food, stick around! There will be plenty of things to whet your appetite!
