This decision came for us when we were juniors at , ultimately deciding on starting a business together that would grow to what we all know and love Paisani to be; the local food truck pumping out the BEST SANDWICHES in focused on creating an experience through personality-driven customer service.

August - Sandwich of the Month ⬇️

The sandwich of the month will rotate throughout the food truck season providing variety utilizing seasonal flavors and ingredients.

August - The Summer Jam is made up of wicked thin cutlets, arugula, house-made basil tomato peach JAM, Grana Padano cheese, and fresh mint aioli. This sandwich is vibrant and refreshing. During the hot Summer month of August, the Summer Jam is going to do a little dance in your mouth and make you want to jump right into the water at M Street Beach after a long shift at the office. Bring your dancing shoes and get ready for this one because it’s a banger. Tough to follow up the popular Charlestown Caesar of July, but with a little help from Tommy Cutlets ( ), we might have did just that…

The Caprese (Melanzana) is so simple, but so, so delicious… People who order this sandwich know good food - from the decadent honey whipped ricotta to the salty, crisp pieces of eggplant.

This sandwich is made for the light hearted. The ones who know it might be too hot for a Drunken Parm or Green Monstah. The ones who order this sandwich do it again and again - it’s like they’ve formed a secret cult for the Caprese sandwich and work to gatekeep just how good it is so it doesn’t become one of the sandwiches that sells out after an hour of service. We are sorry to those folks, but we must let the people know. This sandwich has been on the menu since we opened and there’s a reason for that. Give this one a try next time you’re at the window….

MAY - Sandwich of the Month ⬇️

The sandwich of the month will rotate throughout the food truck season providing variety utilizing seasonal flavors and ingredients.

May - The Purple Line is made up of wicked thin cutlets (eggplant reccomended), arugula, roasted red vinegar peppers, eggplant caponata, and a burrata and basil spread. This sandwich was entirely developed by Tommy. He claims the name was selected as a tribute to Matt and Ryan in remembrance of their time at Lowell where they attended Umass (the better of the three), founded Paisani, and brought their idea to life in the streets of Boston. The Purple Line is one of the MBTA’s most consistent tracks, and this sandwich is no different. Come by on Tuesday to give it a try for the first time as our May SOM. Only available for the month of May…

Another year another Christmas with the Paisans. We are offering catering again this holiday season! Please have orders in by next Friday, December 15th. A google form is in our bio for your order and right here: https://forms.gle/LGquvEKExtczztND6

We are offering delivery this year but only within 20 miles of the I-95 and I-93 split in Woburn. If this doesn’t work for you and you want to order we can try to work something out. Our new kitchen is on Commerce Way in Woburn for anyone looking to pickup. Our pickup window will be on Saturday December 23rd from 10am-12pm. Place your orders now before it’s too late!

LEARN MORE ABOUT THE PILLARS IN WHICH PAISANI WAS CREATED ⬇️⬇️

Thanks to Ed and the rest of the team for featuring us in the latest edition of the Umass Lowell Fall magazine!

Matt and Ryan, the two owners of Paisani, are lucky to have met freshman year of college in the Fox Hall tower. They quickly learned they had lots in common, but were particularly connected by their shared love for cooking and often eating more than their stomachs could handle.

Without Lowell, the story of Paisani could have never been told. Two friends who enjoy having a beer, or a couple, and and thoughtfully crafting their next big meal which they would go on to feed their friends at parties centered around their love for food and hospitality. This was an every weekend occurrence.

A message from the owners: We are forever grateful for our experiences at and the relationships we have made that will last a lifetime. As we navigated the ups and downs of the college lifestyle, we found food to be a way we could appreciate life together. Experimenting with new recipes and using our friends as test dummies for meals we did not yet know would end up on our menu just a few years down the road. We found joy in feeding others and developed a chemistry in the kitchen that would soon translate to a thriving, new business. We found Paisani. Thanks to everyone who helped us get where we are today.

Paisani lovers, meet the HOGAN (named after Ben Hogan - Chello’s favorite golfer): Two thin cuttys, topped with provolone, lettuce, onions, hots, chipotle mayo, and hoagie dressing.

Fall is around the corner which means Paisani is switching up the menu. Stay tuned for more updates as the season approaches!
