Banana Raspberry Bark w/Sunflower Butter, Dark Chocolate, Pepita & Blueberry Flake Salt

4 whole ripe bananas cut into slices
1 pint fresh raspberries
1/2 cup sunflower butter (or any nut butter)
1 bag dark chocolate chips
1 tbsp coconut oil + some for baking tray
1 cup roasted salted pepitas - aka: pumpkin seeds
Sprinkles of flake salt (kosher, or my favorite is Maldon)
*I used blueberry salt for this because it was a gift from Alaska

On a baking tray lay down a piece of parchment paper. Spray lightly with coconut oil spray or lightly grease with coconut oil.

Lay out banana slices next to each other, as close together as possible and filling in the spaces with smaller pieces. Top with a piece of parchment paper and use a glass to “smash” the bananas down slightly.

Remove parchment and top with fresh raspberries, then drizzle with sunflower butter. Place in the freezer for 2 hours.

Melt chocolate chips with 1 tbsp coconut oil in a double boiler, stirring until smooth. Remove tray from freezer and drizzle chocolate over the top of the sunflower butter. Very quickly top with pepitas and sprinkle a little flaky salt over the top.

Place back in the freezer for several hours to set. When ready to eat - break or cut a piece off and enjoy! Must be kept in the freezer.
