Hey, This Landers! It’s a little tough to see past Thursday for everyone. But we wanted to tease your post-leftover appetite for Saturday at starting at 11 AM with a simple cold-weather menu that’ll keep wait times down and hopefully warm you up. Plenty of time to grab food ahead of kickoff at 2:30, so come on out.

Audio was messed up on that reel; sorry. The .shuff riders are mostly through, so we have plenty of food for the public and NO LINE. Come out and see us for a three-meat This Land Sampler. Made a test batch of German potato salad and pork schnitzel last night to make sure we’re solid for the one weekend a year we turn into Deutschland BBQ. We will be at for their Oktoberfest block party this Saturday 1 PM until we sell out!

Celebrate our This Land-iversary with us this weekend !
On this weekend two years ago, we had our first official setup, a pop-up in front of . As fate would have it, Stonecloud reached out about an opening for this Saturday evening, so we will be there 5 PM until sold out.
Our most popular meat (picanha) is back on the cutting board, and so is pork tenderloin with Alabama white sauce!
OSU v Arizona isn’t until 9:30 PM local time, so you’ve got plenty of time to grab some Q and brews before kickoff.
Taking the next couple weekends to love on these kiddos and enjoy some dedicated family time.

Re-posting because it was so good it deserves it! Pork tenderloin with white sauce. On the menu today! Full menu in stories. 5 PM.
They may be St. Louis cut, but they’re still Texas-style. We season with salt, pepper, a little bit of garlic, and then smoke ‘em with local oak until they bend to our liking (about 6-8 hrs.). Then we lightly glaze them as we pull them. Rolling 16 racks strong tomorrow for ! Aiming for a 5 PM start. It’ll just be two of us running the trailer, so we will only have a few side choices to get folks through the line as quickly as possible. Watch for a post with the menu, dropping tomorrow AM!
On off weekends, we cook for ourselves and friends to test new concepts for This Land. Smoked pork tenderloin with celery seed Alabama white sauce. This was so darn good that it might have earned its spot as a regular feature. Who else wants to dunk in some white sauce?
Visited today for the first time. Excellent selection of BBQ supplies, cookers, seasonings, and tools. Super friendly and knowledgeable staff. We could easily get in trouble in there! Not a sponsored post, just a shout-out about folks who are doing it right.
Go see our friends at F-RK this weekend. Just a few more times to catch them before they get into a busy season of catering!
A late start didn’t stop y’all from showing up big, Stillwater! We brought a lot more than last time, and y’all took care of it! We had a two-hour run with no break at one point. Marrying my love of Texas barbecue with portions of my childhood growing up in California, maybe we will call this the CaliTex taquito. I’ve eaten many a rolled taco in San Diego taquerias. This is Barbacoa wrapped in a corn tortilla, topped with a crema/guacamole and the obligatory and necessary Mexican blend shred plus cotija. Simple and perfect.

Y’all blew us out at Walkaround last night! Thank you!! We just lit another fire for @stonecloudbrewingstw where we’ll be from 3 PM until sold out today for your bbq, beverage, and game-time enjoyment. We have pork spare ribs back on the menu as well as picanha, pork belly, and chicken.
Just to keep everyone updated: We received an email last week that the health department should have our paperwork reviewed by end of this week 🙌. Then, they will schedule a walk-through with us. If all goes to plan, we should be full-gas pretty soon 💯! We will keep you in the loop. Abner says it’s cool to use sauce. Just don’t get lost in it. Pro tip: with the exception of a small amount pre-applied to a taco, we like the idea of sauce on the side for a dip, if you like.
