Hello, Christmas brunch!
RECIPE: for 8 pancakes
Cinnamon Filling:
4 tablespoons Butter, melted
1/4 Cup + 2 tablespoons packed brown sugar
1/2 Tablespoon cinnamon
Cream cheese glaze:
4 tablespoons butter
2 oz. Cream cheese, softened
3/4 Cup powdered sugar
1/2 tsp. Vanilla
Make pancake mix according to package directions (or find a recipe online). To make cinnamon filling, combine all ingredients until smooth and put in a ziplock bag, cutting a small hole in one of the corners. Heat a skillet to medium low. Spray with nonstick spray and add 1/2 cup of pancake batter to the skillet. Create a swirl pattern with cinnamon filling in the center of pancake (being careful to not get too close to the edges). Flip the pancake and cook until golden brown (1-2 minutes). For the glaze, melt butter over low heat (or in microwave). Whisk together cream cheese, vanilla, and powdered sugar. Take off the heat and serve over pancakes.

Suppers By States Week 15: Missouri
We all know Kansas City and St. Louis are known for their barbecue, but did you know St. Louis is also known for a dish called the “Slinger”? First developed in an Eat-Rite diner in the 1980’s, one blogger described the Slinger as “the stuff of good times and bad decisions; a culinary car crash of a dish…” Crispy hash browns make up the base, then a cheeseburger is added as well as an over easy egg. To complete this monstrosity, a generous ladle of chili is added to the top. The resulting gut bomb is a delicious combination of all our favorite breakfast, lunch, and dinner foods!

Suppers By States Week 3: South Dakota
South Dakota is home to 9 Native American tribes, and Indian Fry Bread is a staple in these communities. In fact, in 2005, South Dakota declared Fry Bread the official state bread! Developed out of sad necessity in the late1800’s while interned in camps that would eventually become reservations, Native women would use the rations given by the government to make this simple bread to survive. Over the decades, it became a staple at powwows and state fairs. Mexican influence encouraged folks to top their fry bread with taco toppings, and the Indian Taco (also known as Navajo Taco) was born. It was very easy to make and absolutely delicious!
