Pitahaya Purple Velvet Cake with White Chocolate Cream Cheese Frosting

Ingredients:
Cake:

2 1/2 cups all-purpose flour
1 1/2 cups granulated sugar
1 tsp baking soda
1 tsp salt
1 tsp cocoa powder
1 1/2 cups vegetable oil
1 cup buttermilk, at room temperature
2 large eggs, at room temperature
2 tbsp red food coloring
1 tsp white distilled vinegar
1 tsp vanilla extract
1 tsp (or more) purple food coloring
1 cup pitahaya (dragon fruit) puree
Cream Cheese Frosting:

1 pound cream cheese, softened
2 sticks unsalted butter, at room temperature
1 tsp vanilla extract
4 cups sifted confectioners’ sugar
1/4 cup pitahaya puree for coloring
Directions:

Preheat and Prepare Pans: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
Mix Dry Ingredients: In a medium bowl, sift together flour, sugar, baking soda, salt, and cocoa powder.
Mix Wet Ingredients: In a large bowl, whisk together vegetable oil, buttermilk, eggs, red and purple food coloring, vinegar, vanilla, and pitahaya puree until smooth.
Combine Ingredients: Gradually mix dry ingredients into the wet mixture until the batter is smooth.
Bake: Divide the batter evenly between the prepared pans and bake for 25-30 minutes. Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
Prepare Frosting: Beat cream cheese, butter, vanilla, and pitahaya puree until smooth. Gradually add sugar, beating until fluffy.
Assemble Cake: Frost the cake layers and assemble the cake.
Prep Time: 20 minutes | Cooking Time: 30 minutes | Total Time: 1 hour 10 minutes

Kcal: Approximately 420 kcal per slice

I'm sure everyone heard of the almost explosion from our neighbors food truck at Red white and boom tonight. Our generator kept cutting off and wasn't sure why. All of a sudden we heard a loud hissing sound coming from the outside of our trailer, we ran out of our food truck immediately thinking it was ours. But it wasn't, it was the truck next to us. Their propane tanks hose busted and all the propane was leaking out. Greg Tresenriter tried to turn their gas off putting his life in danger. Everyone was yelling and Greg flagged down the fire Marshall's. They made everyone stand clear until it was safe to return to our trucks. The Marshall's presented Greg with this medal for his act of bravery. Everyone was so scared and shaken up except Greg lol he was in his boy scout mode. The fire Marshall's took our picture when they presented him this medal in front of our food truck. I'm so very proud of him and glad everyone was safe. Prayers for the owners of the truck with the leak, and hope they get that fixed so that they can be back in business. Sorry for the long post lol 😆
