Mom’s Birthday Carrot Cake:

INGREDIENTS
For the Carrot Cake
2.5 cups all-purpose flour
2 tsp baking soda
1 tsp baking powder
½ tsp salt
1.5 tsp ground cinnamon
½ tsp ground ginger
2.5 cups freshly shredded carrots
1 cup sweetened shredded coconut
1 cup canned crushed pineapple do not drain
4 eggs room temperature
1 cup vegetable oil
2 cups white granulated sugar
2 tsp vanilla extract
½ cup chopped nuts such as walnuts or pecans

This is the best carrot cake packed with carrots, pineapple, coconut & nuts. It is moist, fluffy & is perfect with cream cheese frosting.
