Quick Dinner Idea!
I had handful of assorted vegetables leftover from this week's meals and a pack of chicken in the fridge with little to no inspiration of what to make for dinner. I set everything out and decided, its a one pan meal night.
I happen to have spinach, asparagus, brussel sprouts and some tomatoes leftover, so i cut them all into bite sized pieces, then cubed up the chicken. A little oil in the pan, cook up the chicken (dont forget to season it!) until its no longer pink. Take chicken out of pan and then put the veg that takes the longest to cook in (brussels in my case), cook for a few minutes then start adding the other ones in order of time to cook. Once vegetables are soft, add some chicken stock, a pat of butter, some lemon zest and lemon juice. Add chicken with juices back in, taste sauce and season one more time and Boom💣💥💣 - Dinner in 20 with leftover vegetable scraps. This would also be delicious over angel hair pasta or rice to soak up that tasty lemon sauce.
My husband eyeballed the plate of vegetables while I was cooking and let me know he only liked one of them (I told him he'll eat whatever I put in front of him, ha) But what do you know - he ate the whole bowl and enjoyed it all. Funny how that happens. 😉
