MRC is happy to be amongst the Pacific Northwest not only for all the amazing fun outdoor activities but also being so close to the abundance of local fresh ingredients. Everything from its freshest seafood right out of the Pacific Ocean and its feeding rivers to the abundance of produce and meats readily available from all the local farmers. Mark has been in the hospitality industry since the age

of 15 starting as a dishwasher and has found his love and passion for food, culture and creativity all while learning from those around him. Mark has had the opportunity of working with some of Seattle’s premier chefs from learning to fillet whole fish and running a restaurant with Russell Lowell to dancing on the hotline side by side with Holly Smith specializing in Northern Italian Cuisine while perfecting his cooking technique and palate. He then decided to learn the ins-n-outs of the catering world full on while working closely with Lisa Dupar. He has traveled all over South America learning their culture and cooking styles as well as learning from well-known chefs while living out in Chicago. MRC is proud to create a classic menu for your next event whether is for a couples dinner party, celebrating the tying of knots or even a backyard BBQ we are ready to make the event one to never forget. We strive to create new dishes that fit our guests needs from the inspirations that surround us in the PNW.

If you want to be successful at something it means giving up certain things and putting in the hard work that others just aren’t willing to do.

Stop telling people what your going to do

Instead SHOW them what you’ve done.

Work hard in the shadows

Continuously adapt to your surroundings

Don’t stop, even when you want to give up….keep pushing because that’s where the best lessons in life are learned.

Get comfortable with being uncomfortable.

Happy Friday "eve" and hope everyone is having a great day!

We have been whipping up a food storm here in the test kitchen and wanted to share our most recent recipe with everyone and let you give it a try at home!

Would love to hear what you thought and if you even got an inner chef inside how you made this into your own with some of your favorite twists!

Pan Fried Baby potatoes w/ Kale and sliced steak
Serves 2
1 lb baby potatoes cut in half
1 sweet onion sliced 1/2" thick
1/4 cup chopped parsley
1 tsp cumin
1 tsp sea salt
2 tbl extra virgin olive oil
1 giant handful of de-stemmed kale rough chopped.
1 lemon zest and juice
2 MRfitmeals a la carte Top Sirloin steaks
In a skillet over medium heat, add the oil and then toss in the baby potatoes and cook for about five minutes.
Then add in the onion, salt, cumin and cook till onions are tender and potatoes are soft. About another five minutes.
Then toss in the kale and mix around till wilted. Quickly add in the chopped parsley, lemon zest and a nice squeeze of the lemon juice.
Mix around and season if needed.
Place on a plate and add the sliced MRfitmeals Top Sirloin steak and ENJOY!

Almond butter!!!
It’s very easy to incorporate the benefits of almond butter into your diet. You can substitute almond butter for anything that calls for peanut butter – sandwiches, celery sticks, a few tablespoons in a smoothie, or on crackers.
Scroll down to view my very own recipe that I’m happy to share.. super easy and taste way better than the store bought.
But first a few facts on nut butters..
They are full of healthy fats that our body requires
Heart healthy, nutrient packed and helps with low blood pressure.
Great source of minerals manganese and copper and even B2 which all contribute to better energy production💪🏼
Low glycemic index which is great for diabetics
Contains essential fatty acids that work wonders for healthier skin
Here’s how I make mine
✅2c almond slightly toasted
✅1/4 tsp minced garlic
✅2tsp EVOO
✅Pinch of salt
✅Pinch of cayenne pepper (more of you like spicy 🌶)
Combine all the ingredients into a cuisinart mixer and let it blend until smooth. This can take several minutes so don’t worry if it clumps up. As it blends the natural oils will begin to release and it will begin to smooth out.

Not letting my fitness goals fall behind. Had a great leg day session.
✅Russian KB swing warmup with med ball twists(warmup)
✅backsquats @ 60-80% 4x8 with Heavy DB goblet squats
✅machine press 4x8 w/20 air squats in between ea set
✅hamstring superset- one leg then both legs (8x8x8) w/ banded thrusters 3x8 total reps
✅ row 1000m while listening to eye of the tiger. My goal was to row 900m in under 4min (which is the length of the song) and I got 1000. I just couldn’t get my phone quick enough to take a pic as soon as I was done so🤷🏼‍♂️😜.
The last pic was my lunch of lean beef, broccoli and cauliflower curry with raisin brown rice! Yum.💪🏼

Our Story

MR fitmeals creator and Chef Mark Riggs has been in the hospitality industry since the age of 15 starting as a dishwasher and has found his love and passion for food, culture, and creativity all while learning from those around him. His travels have led him all over from Seattle to Chicago and even down into South America where he immersed himself in many different cultures and learned about diverse cooking styles. Mark has had the opportunity of collaborating with some of Seattle’s premier chefs.

Mark grew up playing all types of sports (baseball, soccer, football, wrestling & rugby) as a kid growing up with his 3 brothers and has continued his passion for an active lifestyle to this day. With his busy life working in the hospitality industry and staying active finding the time to eat properly with healthy nutritious meals was always a struggle. Spending the time it took to plan, prep, cook and enjoy was not always convenient and meal prep became a second job/ lifestyle in itself. Light bulb-MR Fitmeals.

Now Mark and his team have the opportunity to create exclusive recipes for customers every week, combining classic techniques with healthy and exciting ingredients full of flavors.

Mark wanted to create a system that combined organic, healthy, delicious food that was cooked fresh, with convenience and a reasonable price, so he decided he was going to have to create it himself and do whatever it takes to make this dream come to life.
