flavor highlights ✨ from today’s tasting packages:

1) Creme Brulee’ cupcakes
2) Bananas Foster cupcakes
3) Eclair & Cream Puff pastries
4) Orange Honey Blossom cupcakes
5 -7) Cannoli Cake (baker’s choice) This 6” two-layer had Amaretto-Chip and Vanilla Italia cakes, with Italian Custard filling, sealed in semi-sweet chocolate ganache, covered in textured vanilla buttercream with a sprinkling of mini chocolate chips at the top, stacked with chocolate-dipped cannolis at the bottom, that I dipped in mini chocolate chips for the slices.

a few of my favorite things from our latest tasting package:
+ trifle: mini gluten free Key Lime Pie
+ cookie assortment: small-bake Vanilla Chai, Double Chocolate Espresso Chip, and Salted Chocolate Chip
+ bar: mini Salted Magic Coconut Toffee (naturally egg free)

This morning two free surprise cakes were sliced to package into our two different March tastings. For the classic recipe package, I developed Raspberry-Stripe Neapolitan. For our alternative-recipe package: vegan & gluten free Double Dutch Chocolate. 🤍💝🤎

Raspberry-Stripe Neapolitan
8” three-layer
Cake flavors in Italian Vanilla Sponge and Dutch Chocolate. The first filling is a swirl of chocolate and fresh raspberry buttercream with a ribbon of raspberry preserve. The second filling is a swirl of fluffy vanilla buttercream with Italian custard.

The crumb is sealed in white chocolate ganache, covered in smooth stripes of chocolate, vanilla, and raspberry buttercreams.

Vegan & Gluten Free Double Dutch
6” two-layer
Dutch Chocolate cake layers are filled and covered in chocolate frosting.

The crumb is sealed in vegan dark chocolate ganache, covered with lots of texture.

Recap on what I made for last night’s celebration at home for Nikko’s birthday:

✨ 6” two-layer with flavors in B-day Sprinkles and a new recipe I developed called Dutch Velvet (a dark, Dutch chocolate cake that is super airy, light, and delish, that I’ve been topping with a Dutch chocolate cream cheese frosting… it’s insane). Filling is egg-free chocolate chip cookie dough. Crumb is sealed in white chocolate ganache, and covered in vanilla buttercream with a micro rib technique, and textured sprinkles to resemble galaxies of the universe.
✨Sprinkle-Doodle cookies to match, all over dipped in the same types of sprinkles. (had a perfect chew inside and slight crisp edge that is seriously addicting)
✨Also made (not shown) Cannoli, Classic Chocolate Chip Cookies, and a huge lasagna (so much joy and love in celebrating my wonderful son).

Vanilla Chai with Carrot 🤍🤍🤍

For each tasting package menu, I develop a custom creation to slice and share as a free surprise.

This 8” three-layer features layers of Carrot Cake, Italian Ricotta Cheesecake, and Vanilla Chai, with vanilla cream cheese and a swirl of dulce de leche caramel. The crumb is sealed in white chocolate ganache, and covered in a thin layer of textured vanilla buttercream with strategically placed preserved skeleton leaf petals.
