We’ve been blessed with yet another gorgeous summer day in Chicago and I woke up craving a refreshing Ceviche! I’m also always looking for one more way to enjoy that Bombay Chili Crunch 🤷🏽♀️
The fresh Lychees from last night inspired this crisp and citrusy Lychee and Red Snapper Ceviche today. A drizzle from a fresh batch of Bombay Chili Crunch and some of Everything (but the) Chaat Masala (c) spiced homemade Tortilla chips completed the dream and let me tell you - if you’re not planning to make this as soon as you get your hands on our Bombay Chili Crunch, are you even soaking in the summer!?

I rotate new flavors for our hand pies each week, which keeps it fun and offers you a chance to taste the diaspora of regional Indian flavors!
Lately, it’s been these buttery flaky Goan Cafreal Chicken hand pies! Cafreal has its origins in African cuisine, which deserves all the credit for this uber-flavorful green spice paste. African soldiers deployed in the Portuguese armies in Goa, brought this dish to the region.
The luscious herby marinade is made with Cilantro and a variety of spices, all blended together with Goa’s precious nectar, Coconut Vinegar. We source ours directly from the Pearl of the Orient, made by independent cottage producers who pack their Vinegar in recycled Toddy bottles. This essential ingredient lends a gentle tartness and rounded sweetness to Cafreal, it’s signature flavor profile.

Vegetable au Gratin.
I associate this dish with the ultimate feeling of comfort and safety because she made this for me on the eve of my exams, when I was in school. I was a very poor student through middle and high school and I dreaded exam time. To make me feel less anxious and take my mind off studying, mom would cook fancy dishes for dinner. Au Gratin was always one of these dishes, paired with cheesy garlicky toast.
Most of my friends reported getting a delicious meal as a treat if they did well on their exams. For me, I was treated by mom and dad no matter what my exam results were. Some days I cannot even begin to fathom how extraordinarily fortunate and blessed I was and am to be their daughter. 🥲🥰
Food has and will always be our love language. It's a very powerful way of creating a connection and expressing love and gratitude. Tasting India has therefore been the perfect way for me to create connections with you, show my gratitude for your continued support and have a shared experience that transcends any other “gift” I could have ever shared with you.

Kaapi. What’s in a name?
Kaapi was probably adopted as a phonetic rendering of the word Coffee, in South India. What sets Filter Kaapi apart is that it’s blended with Chicory and a thick decoction is brewed in a traditional Filter, which is then mixed and aerated with hot milk and sugar, using traditional davaras.
It is rumoured that in the 17th century, when coffee was in short supply, the French and Germans started blending chicory with coffee. Some others believe that chicory was added for its medicinal properties.
Whatever the case, @tasting_india’s Cardamom Filter Kaapi is aromatic, earthy and floral and one of the best cups you could hope to enjoy in the morning!
