Tasting India is a weekly culinary adventure by Chef Jasmine, where she creates a flavor rich Thali (think an Indian Bento Box style meal made up of a selection of various dishes which are served on a large platter), highlighting a different Indian Regional Cuisine each week. Woven together with her personal stories of growing up in India, her weekly menus are like a rich cultural scavenger hunt!

We took a little break for this long weekend but we’re back at markets with a bang this week!! (see slide 3 for our schedule)

We’re thrilled to be part of again, this time in Wicker Park! We’re booth 128 (see map on next slide) so stop in to smell the spices and say hi as we party with (we’re sharing a booth!!).

As always, we love our local community at and and we’ll be there with some delicious Samosas and Lassis to keep you fed and happy as you browse the markets and its many excellent vendors!

Our first Wedding Cake!!🥂🎊

We were so thrilled and honored when a client reached out and asked us to recreate the flavors from a birthday cake sample I shared with Farmers Market customers, over two years ago! They asked us to create their Elopment celebration cake inspired by those flavors.

They also wanted to fuse in flavors from their partners hometown in South India, so we cooked up a luscious Pineapple Jaggery number inspired by South Indian desserts.

Cardamom Pistachio Cake, Saffron Mango Lassi Cream Cheese Mousse, filled with Amma’s Chai Masala Pineapple Marmalade.

It was, what seems like, many summers ago, that I was in Italy, enjoying a Brioche con Gelato for breakfast. Pistachio Gelato was my favorite, sandwiched between the fluffiest most buttery rich freshly baked Brioche Bun.

While I’m not in Italy currently (or anytime in the foreseeable future), I had to find a way to bring Italy to me!

Homemade Pistachio butter makes for silky rich Pistachio Chai Ice Cream, swirled with Blueberry Fig Jam and Brioche White Chocolate streusel.

Our Amma’s Chai Masala is really the most perfect touch for desserts. It livens up a vanilla cake or adds depth of flavor to a rich Chocolate and, in this case, Pistachio based creations. Perfectly balanced with Cinnamon, Nutmeg, Fennel, Cloves and Ginger; it makes for a dreamy blend!

Our motto at Tasting India, has always been to draw inspiration from global culinary traditions and integrate them with spices in fun and approachable ways.

It’s been FOUR YEARS ya’ll!! 🎉

I woke up this morning and my phone flashed a memory from exactly four years ago - a bright pink screen boasting an elaborate list of menu items that was released to our very first customers! It featured this lucious Yogurt Kadhi served with crispy Onion fritters and 5-6 other dishes that made a hearty Punjabi Thali.

I can still feel the excitement and nerves I felt then, in my heart today. I was just a wee little business that didn’t even know it was a business! I was just trying to represent my culture and bring comfort and nourishment to people during one of the hardest times we’ve experienced.

Since then we’ve served thousands of you, have been written up in some of the best publications buy the most generous and brilliant writers, hosted several pop ups, been nominated for prestigious awards and have started to carve out our own little space in the CPG world! All because of YOUR SUPPORT!❤️

I hadn’t planned on celebrating because the anniversary wasn’t even on my radar! But I think this calls for something special so let’s have a fun giveaway to celebrate!

There is more than enough room for all the players, we’re all doing our part in highlighting the culinary traditions of our culture and family recipes that no one should be allowed to gate keep in the manner that the Momofuku brand has chosen to do. Plus, you’re trying to own something that belongs to EVERYONE!!

To use one’s influence and power to break down rather than build up, is such a waste of privilege. It’s shameful.

This crab mentality - that one must push the others down in order to lift oneself up, is so problematic yet reflects the scarcity mentality many BIPOC communities have experienced for years and years.

We must sprint together to create real impactful change. Creators, Brands, Chefs, Retailers and most importantly, Consumers. Not speaking up is not an option anymore. Shoutout to and others for speaking up and showing up!

So what can YOU do?
- Continue to fiercely support your local, small POC/Women owned businesses and BUY their Chili Crunch/Crisp/Oil. Buy an extra jar and gift it to a friend! Nothing speaks louder than action (and your money!)
- When you walk into your grocery store again, implore the managers to carry products from ethically operating and local, small POC/Women owned brands. The louder we ask, the harder it will be for them to ignore us!
- Be Vocal - speak up for yourselves and for the brands you love and support. Share the message far and wide and spread awareness about the trademark bullies so more people know to switch their consumption habits to align with their ethics
- Comment, share, write a review - clearly, social media is a powerful tool. Use your virtual voice meaningfully!

There is ALWAYS more room for spice!🌶️🙏🏽

This time three years ago, I was knee deep into sharing my culture and the breadth of its cuisine through our weekly Thali series.

Each Holi (the festival of Colors), my mother and I would take a drive through the colorful streets of Bombay. We’d visit our favorite Mithai shop and I would run up to the counter with immense excitement and order us two Thandai (a drink traditionally enjoyed on Holi, thick milk infused with sweet spices and nuts, sometimes infused with Bhaang)!

The colorful day would end with hot Jalebis, Khatte Amritsari Chole and hot Kati rolls to name a few. Just the most amazingly perfect day!

Holi waves goodbye to winter and celebrates the coming of spring and sunshine and good tidings. After the grueling ordeal I’ve endured recently, here’s wishing you all a very Happy Holi and many colorful good tidings to come!

Slide 2: a cup of Thandai sitting amidst whole spices. Synonymous with the celebration of Holi; this cool, nutty, spiced and fruity drink is the best milkshake you’ll ever have!
Slide 3: a Thali full of colorful dishes which include Jalebi, raw Papaya Salad, Fafda, Beetroot Raita, Pea Flower Coconut Rice, Roti, Curried Chickpeas and spiced Yogurt Soup. In the side is a cup of Thandai and a sweet Truffle.

Spicy, crispy Potato Croquettes served with herbaceous Cilantro chutney, sweet Tamarind chutney and a drizzle of Bombay Chili Crunch.

Sometimes, self care looks like a delicious plate of food.

The breakfast I fell asleep dreaming of 🤷🏽‍♀️

Graham Cracker cookie, Chai Pistachio Butter (yes, we home make ours!), Pomogranate pearls, Vanilla Greek Yogurt.

It feels like a very Spring-y Breakfast, very on brand for the gorgeous weather we’re enjoying. It’s also very addictive, so I’ll be enjoying one for a mid morning and afternoon snack as well😋

Amma’s Chai Masala offers the right amount of peppery bite to this earthy nutty loaf, slathered in tangy Cream Cheese frosting, it was definitely the late night treat to scratch my itch! 🤣
