Fall has finally arrived in the way those of us who live here in the know it😁. We welcome cold, windy, rainy mornings knowing that all that needs to be refreshed, is being refreshed 🌧
One of the things I love most about Fall is all the delicious comfort foods the season brings with it, soups, stews, curry and every hybrid in between. Recently, I got a bit adventurous in the kitchen, while in the procession of a bounty of freshly caught Dungeness crabs. I was starving and on the verge of getting hangry and I couldn’t settle on which of two dishes I wanted to cook. Coconut Curry Crabs or a Trinidad Callaloo. As had happened many times before, my hunger won out and I decided to make a combination of both dishes. Obviously because when one is hungry there is no reason to cook conventional dishes. I am not even kidding you😂 My Coconut Curry Crab & Callaloo was absolutely delicious, and it’s now on my list of menu items that i will make on repeat. To my 🇹🇹 friends, I promise I’ll still make both these dishes individually, but you should definitely give the combination a try. To my PNW community, I know you would love this dish, spinach, butternut squash, carrots, bell peppers, pimento peppers, scotch bonnet peppers, okra, onions, garlic, tons of fresh herbs all simmered in a delicious curry with coconut cream. The star of the show is the Dungeness crab which is added about 10-12 minutes before the dish is done cooking. Served over fragrant jasmine rice, eat on repeat. Welcome Fall and it it’s beautiful comfort foods.
