Hey friends, earlier this year Cascade PBS reached out to us to ask us to share a bit about Calypso Kitchen and our work Pnw Plateful. Though I am always a bit hesitant about being in the spotlight, I felt it was important to share with you (our community) the work that our team is doing. A public service reminder to get outside and go adventure.
Getting outside and enjoying the warmth or rather the heat of the summer sun while it’s here in the PNW is compulsory. Our little team attempted a trek up at Mt. Baker. We were supposed to be circumnavigating the Chain Lake Loop Trailhead, but someone (me) missed a blaze/sign post and we went left instead off right. Turned out to be a gorgeous hike and time well spent😀

It feels like spring in the I hope everyone gets a chance to enjoy the ☀️ I was at Adagio’s to get my favorite spicy hot chocolate and was pleasantly surprised to see vases full of beautiful blooms that they grow themselves. we do our best to provide you with phenomenal Caribbean flavors and stellar service. We thank our wonderful community for your continued support, “thank you folks”. We are looking forward to working with all of you sometime in the future.
We want to take this opportunity to share a little bit about a project we’ve been working on for the past 3 years and earlier this year in January the project became a 501c3, is a food justice project, it’s our way of taking care of our community, for the past 3 years we’ve been making and providing approx. 250 delicious scratch made individually packaged meals that are shared with those in our community who need it. Starting the first week of May we will be increasing the number of meals we make. We are thrilled to say that we will be increasing the number of meals to 500 meals weekly. Calypso Kitchen’s Seafood Stew.

Red Shrimp & Rock Cod cooked into a simple flavorful tomato stew.
Our pnw weather is still calling for warming comfort foods, and I was craving a stew similar to that of my grandma’s (admittedly mine came out way less saucy).
Tomatoes, Red Bell Peppers, Onions, Parsley, Scallions, Garlic,Ginger, Thyme & Oregano all went into the sauce along with a bit of Aleppo pepper, Trinidad Pimento, salt and black pepper. Once the sauce was almost ready, the marinated seafood was added and allowed to finish cooking for about 10 mins. Yum!

I had the best brève I’ve had in a long time and what a surprise to me, it was served hot and in a glass by the most pleasant barista who just happens to be one of the two owners of For breakfast I had the biscuit, sausage and gravy combo . The flavors and textures of which were anything but simple. It was delicious!! Sage & Sky Farms lamb burger with Calypso Kitchen Blueberry Tamarind Glaze, caramelized onion, Samish Bay feta, romaine lettuce, served with fries is sumptuous, if you haven’t tried it as yet I suggest you do. The tart and and sweet of the Blueberry Tamarind Glaze compliments the richness of the flavors of the lamb patty and plays well with the flavors of the feta. Yum!!

We were able to share a fantastic 🇹🇹 food experience via a cooking class. I am at my best when I get the opportunity to stand amidst a group of people and talk about the food and flavors I grew up eating in the Caribbean 🇹🇹, I am a self appointed food ambassador. You can’t get me to quit talking about all the delicious island food I grew up watching my grandma, mom and aunties cook while I ate myself into food heaven 😁

This group was a natural, their Trini “Buss Up Shut” (paratha/naan) was buttery and silky and the Curries were vibrant and flavorful.

Plated - Paratha Roti (Buss Up Shut), Curry Chicken, Curry Chickpeas & a sautéed Butternut Squash with lots of roasted cumin.

Fall has finally arrived in the way those of us who live here in the know it😁. We welcome cold, windy, rainy mornings knowing that all that needs to be refreshed, is being refreshed 🌧
One of the things I love most about Fall is all the delicious comfort foods the season brings with it, soups, stews, curry and every hybrid in between. Recently, I got a bit adventurous in the kitchen, while in the procession of a bounty of freshly caught Dungeness crabs. I was starving and on the verge of getting hangry and I couldn’t settle on which of two dishes I wanted to cook. Coconut Curry Crabs or a Trinidad Callaloo. As had happened many times before, my hunger won out and I decided to make a combination of both dishes. Obviously because when one is hungry there is no reason to cook conventional dishes. I am not even kidding you😂 My Coconut Curry Crab & Callaloo was absolutely delicious, and it’s now on my list of menu items that i will make on repeat. To my 🇹🇹 friends, I promise I’ll still make both these dishes individually, but you should definitely give the combination a try. To my PNW community, I know you would love this dish, spinach, butternut squash, carrots, bell peppers, pimento peppers, scotch bonnet peppers, okra, onions, garlic, tons of fresh herbs all simmered in a delicious curry with coconut cream. The star of the show is the Dungeness crab which is added about 10-12 minutes before the dish is done cooking. Served over fragrant jasmine rice, eat on repeat. Welcome Fall and it it’s beautiful comfort foods.

Cheers to you all and a huge THANK YOU to everyone who took the time to vote for We are extremely grateful for the support of our community and we’re even more grateful to the clients we get to work with. After the past two years of having to navigate what we do through a pandemic, this past summer brought back a lot of the joyful aspects of what we do, and that is, being able to closely interact with our wonderful clients. As many of you may now know, I not only enjoy creating food that comes out of Calypso Kitchen, I also ❤️ sharing the history of the food from my own personal/family perspective and also from the perspective of the islands 🇹🇹 where I grew up.

Hibiscus
Our Hibiscus Nectar made into Hibiscus Fizz is the ultimate “Red drink” and has been a hit since we started serving it, and this past summer it continued to be a huge hit at every event Bellingham Seattle Caterer]]]] catered. The flavors are fresh, fruity, citrusy, zesty with a touch of warm spice. I am so happy to share this little bit of Caribbean flavor that I grew up enjoying with everyone😁.
Bellingham Seattle Caterer]]]] Hibiscus Nectar is brewed with the sepals of the Sorrel/Roselle flower along with a mélange of spices. The Sorrel plant is native to India and grows throughout the world in hot climates. Growing up back home in 🇹🇹this was one of the crops my dad planted in our home garden. We would harvest fresh sorrel, peel the sepals of and brew fresh sorrel all in the same day. Sorrel drink or Hibiscus as we know it here in the is always delicious.
Jimmy and his lovely family have worked over the last few years to provide some of the products we use Bellingham Seattle Caterer]]]] , Jimmy has worked very hard at trying to find a way to grow Sorrel along with other tropical crops on his small family farm here in the PNW for us to use Bellingham Seattle Caterer]]]] . I visited with Jimmy and his family recently to take a tour of the little farm and see how the Sorrel/Hibiscus plants were thriving and I was so pleased to see fresh beautiful Sorrel growing so beautifully here despite our brief summer. I took a few pictures to share with you, much gratitude goes to local farmers who put so much time, energy and resources into getting us fresh produce. Hello friends, I hope everyone is enjoying your summer. has been happily and busily enjoying the hot/warm/not so hot days, so much so, July came and went in a fantastic blur. THANK YOU ALL for the beautiful birthday wishes in JULY, my day was shared with my people and filled with fun, lots of good food and laughter.

Hello friends, a silly car selfie to share a wonderful thought and a smile with you. Today is the last day of Asian American Pacific Islander Heritage Month and tomorrow is the beginning of Caribbean-American Heritage Month. I am proud to be an American of mixed Asian Caribbean heritage! During the month of May, 🇺🇸 celebrates our Asian Americans and Pacific Islanders in the 🇺🇸 for their contributions and next month, we do the same for our Caribbean-Americans. I am especially grateful that I have been able to give my daughters the opportunity to live, learn and grow here in 🇺🇸 while still being able to teach them about their multi ethnic background, much of that is taught to them through the food/recipes that I create I am grateful for the small and big things in our life keep us grounded.

Rice & Peas.
A melange of ingredients, rice, peas, vegetables, herbs, spices, pimentos and coconut milk come together to create this simple, yet outstanding dish of rice & peas. It’s the perfect everyday comfort food.
When cooked right, no ingredient stands alone in this dish however for me the stars of the dish are always the peas & pimentos. I used English peas in this recipe, however growing up on the islands 🇹🇹 my dad grew fresh pigeon peas which is my absolute favorite peas for making this dish along with Trinidad pimento peppers.
This is a dish of which you will find many variations of throughout the Caribbean, South America. Tell us what it is called where you live? 😁
