Thank you! Your support has been overwhelming in a very good way. Below is Aegenwolf (our Fjord horse) letting everyone know that our Evergreen Wreath pre-orders are closed. There are only so many dried florals available and we like to forage the trees responsibly. We will have a few more unique wreaths for purchase at Lillie Valley Farm and Essex Food Hub starting 12/1 and 12/2. That wooden "shack" behind the horses will be our future wreath room. Next year, that mouthy horse will be pulling in tree limbs for you to cut your own evergreens and make your own wreaths! He needs a job! And we aim to create more inviting spaces for our customers aka friends to be a part of the farm.

We are starting to get orders for our Holiday Wreaths. They are all custom made from evergreens and dried flowers from the farm. We do not make wreaths until a very hard frost, that is why our wreaths last so long. Cutting a tree beforehand does not allow the moisture to seep through the branches. Below is an example of last year and this year, I have some additional offerings, so stay tuned. Will post all available wreaths weekend of 11/29-12/2. All sustainably grown, foraged responsibly and no shipping from elsewhere.

We premiered our new cheese, Fromage Blanc at the Paradox Brewery Farm to Table Winter Harvest Dinner. Thank you to chef Gavin for the support, what a beautiful brewery and dedicated owners. The cheese and our curds, butter and creme fraiche was well received and we met some amazing folks. We will have this cheese out in the world this week, flavors are Honey Fig, Mixed Herb and Maple. Stay tuned!

Last post but wow, thank you Crown Point for making our Halloween the best. I always hesitate to post how wonderful our town is for fear everyone will want to move here. I have lived all over the country but life on the Hogback is truly special. Marty and family, we saw the meteors tonight! We had a dinosaur that scared Aegean our horse, guess the trick was on him, on his birthday no less. And we are forever grateful to watch the amazing little girls across the street grow up and see their costumes each year. I will leave you with 2 pictures, the light through the trees on this magical night and Aegean celebrating his horsie birthday with Mike. Happy Halloween

Getting ready to order seed for the store for spring from Hudson Valley Seed Co. My go to source for all Heirloom, Organic seeds with great germination rates. These are varieties you will not find in large box stores. I would love to have Grow Together! sessions on the farm and/or online next season. We can all learn from one another. Below are some of the tomato varieties we grew this year for home use. My husband does not like raw tomatoes, so the only salad tomatoes I grow are the very small but flavorful spoon tomato types. No cutting, just wash and toss. For sauce (which we roast in olive oil and freeze), we use San Marzano, however, this year I discovered the Jersey Devil (Opalka type) tomato and wow! hardly any seeds and full of flavor. Pictured below are the paste tomatoes we grew this year. San Marzano, Amish Paste (the rounder one) and that long beautiful Jersey Devil tomato.

We have been quiet for the last few weeks and are now ready to get back to all things farming and cheese so stay tuned here and Instagram for announcements.

First: Our horse barn was in dire need of repair, structurally. We also have a 24-year-old horse that needs his own space/room from our 4-year-old horse (Aegen pictured below) who wants to play all the time. We really should be tearing it down, but it is historic to the property. So here we are. This horse barn will be transformed to a wreath room in the next few months for classes and an area to sit an observe the farm and animals.

Secondly: We are in the process of making new cheeses. After some trials on different cultures and methods, we have developed a delicious Fromage Blanc, soft white spreadable cheese. It is silky, tangy and takes on flavors nicely. We are working on writing our food safety plan to get this wonderful cheese out into the world in the next few weeks. Anticipated flavors are Honey/Fig, Cranberry/Orange, Honey/Lemon/Lavender (my favorite) and a seasonal Pumpkin Spice.

It is just my husband, I and the girls (the cows) so we appreciate all the support and patience. We aim to stay small for quality and animal welfare. However, we also need to work on marketing and connecting with our wholesale and retail customers. We need to take time to not only build "our story" but also share it.

Our farm is very supportive of the TNR (trap, neuter, release) program. I have always struggled with having "barn" cats....

Our farm is very supportive of the TNR (trap, neuter, release) program. I have always struggled with having "barn" cats. I love cats and only had indoor, our first 4 barn cat failures are lying upstairs on the bed as I type this, refusing to ever go outdoors. The first time I saw a rat in the dairy barn, really changed my mind. We do not want to use pesticides as those that feed on the mice and rats will be poisoned (eagles/hawks). We do not want any pesticides around our dairy cows. Well, insert barn cat, reluctantly. We have 3 barn cats from Keeseville Cat Rescue, an amazing organization. We have not seen a rat, mouse since. And they have kept the groundhogs out of my flowers. One of our barn cats hurt her leg, of course, the unfriendly one, so we had to put out a trap and this is what showed (not the cat we were trying to capture). Her (Marie's) leg is better by the way but we did not know what to do with this cat. We adopt cats, do not do TNR ourselves. We posted to see if he had an owner. He was hissing and jumping at the cage. Not domestic. We contacted Angel Connection in Ticonderoga, and they walked us through the process of TNR and what to expect, they even helped get us into a vet earlier for neuter/shots. Well, we paid the bill, brought him home and kept him in a very large cage (not one pictured) for over a week. Today, when we went to release him, he meowed, frightened still but let us pet and rub his cheek. We named him Morris (all our barn cats names start with M) and I truly hope he knows he now has a home and returns. He has food, water, a bed and safe place upstairs in the dairy barn. Our other barn cats, Moe, Mickey and Marie had acclimated to him. It is so heartbreaking to put so much effort in to let go. Please support TNR, Keeseville Feral Cat Rescue and Angel Connection.

On farm self-serve this weekend. We are under construction for our horse barn and delivering wholesale deliveries. We are looking forward to creating a space for our customers to experience the farm in a tranquil setting. More to come but always help yourself in the store.

Good morning, store open to 6pm today. SALE, all remaining potted herbs $2. We also have zinnia bouquets, 10-12 stems $10. And we carry local soaps from North Road Soap Co. and tallow creams from The Dorr Homestead. And of course, cheese curds and butter.

Truest words, there is nature, science and luck in both butter and cheese. Seasonal grazing and diet, outside temperature and humidity, processing room temperature, timing of churn/culturing, strength of the culture, fat content of the milk, lactation from calving.... and we are looking at expanding into aged cheeses. ha! I am a science geek but still hold a firm belief that the happiness of our cows comes through in our products. Like most things based in faith, no scientific evidence but the love of the bovine is what keeps us committed to what we do. When we have a large vet bill or worried about feed/hay production through the winter, knowing we give a purposeful life to our cows and ourselves is what drives us. One of the greatest joys is watching our girls come from pasture one by one, called by name. and, just wanted to share, because I love Anthony Bourdain, having owned a restaurant and bar in Sarasota in a past life, I know, like farming what uncertainty and those 18-hour days feel like.

If considering joining the gym, now is a better time than ever to join the The Garrison Gym at their Ticonderoga location. The picture below is their Port Henry location, which was flooded in the recent storms. The Ticonderoga location is still as operational and welcoming as ever. The owners are always there to help with anything you need and answer questions. They, like us, built their business through their own financial savings and sweat equity (literally in their case). You may wonder, why do farmers need a gym membership, well, farming, you are not targeting muscles or stretching the areas that are overworked. The gym allows us to build foundational strength that offsets overuse to help us keep going and doing. Be kind to your body and consider a gym membership, they also offer seasonal and day passes.

No surrender..

We have taken a major loss today.

We are unsure of the future of The Garrison Gym Outpost Victory, but we will work tirelessly to restore this facility if at all possible. We have not given up.

All memberships are accepted and will grant access to the Ticonderoga location which is 100% operational.

We can prepare a beautiful and affordable bouquet from our locally grown flowers to pick up at your convenience. For farm-fresh bouquets, message via FB for no contact pick-up at the farm store weekdays and Sundays.
