We met in 2013 at JB’S Pourhouse in Hermitage TN. We built an immediate bond through our mutual love of family, travel and food. While working together, we would spend our time talking about how awesome it would be to open up a restaurant of our own one day.
One night in 2017 we were discussing family memories. An idea sparked from a recipe that was served throughout our childhood: Southern, pan-fried potato cakes. These delicious cakes were made for us on nights when leftover mashed potatoes were available from dinner the night before. They were savory. Comforting. They were southern. They were PERFECT for a food truck. From that evening on, we talked non-stop about the what if’s and what not’s of trying to actually pull off our business idea.
It would take until February 2019 for us to finally work up the courage to take the next step. We had been looking at trucks for sale in the Nashville area since our concept began to form. We found several trucks and trailers that seemed like decent candidates, but none that screamed at us to bring them home. Then it happened. On a Sunday evening, surrounded by family, it happened. We were all sitting around when Amber looked up from her phone and said, “Oh my gosh. You have to come look at this one.”
It was perfect. A truck with a newly built kitchen. Shiny. Perfect. Orange. It had a price tag that was hard to believe was real. IT WAS IN PORTLAND, OREGON... 2,500miles away from home. We booked our flights immediately. We felt certain our family thought we had lost our minds.
