Made this delicious way to use couscous as our breakfast! We added some dried fruits and chia seeds to that nutty and crunchy texture and flavor! And we used ground pistachios. So yummy and customizable which is fun for the kids!❤️

Decided to give this a go and I have to say I’m impressed; it was a hit! The girls love hot dogs especially in the summer so this will be a nice way to add something homemade. The recipe is below and I used it as a guide. A few things I did differently: Air fryer instead of steaming. Added mushrooms instead of beets because I’m the only one who likes it. Will definitely experiment some more! Let me know how it works for you!😋

Happy rainy Saturday here! I recently made this soup on a whim for my client who wasn’t feeling well. By using veggie scraps, extra shredded chicken and orecchiette pasta. Lightly season to your taste with a little tumeric. Nice to freeze and have on hand by just simmering with optional pasta.💪🏽

My Passion for Food
I left Trinidad when I was 15, coming from very humble beginnings. My grandmother first taught me about the importance of preparing and sharing food. We had a garden and she raised chickens. Sometimes she would go fish while she watched over a beach house. Growing up near the ocean and appreciating what was grown and caught was very important. Somehow, my grandmother always cooked enough food to share. Friends and family can stop by guaranteed to get a plate of food from her sweet hands, which is a compliment to someone who cooks delicious food. As I got older I had to take on the responsibility of cooking meals for my siblings while my parents worked to provide for us. It gave me great joy using what was available and creating something new each time. My mother was then, and still known for her sweet hands as well. She has taught me a few of her secrets especially when making some of my favorite meals. She always reminded me to cook with LOVE!
Finally, we migrated to America in 1999 for a better life. I was especially excited about seeing so many different kinds of food in NY. Even though we enjoyed the abundance of products from the Caribbean I was hungry for more. I eventually joined the Navy where I travelled and got to experience a variety of different cultures and of course the food! I remember one time our ship pulled into the Congo and we were able to go help a small community build a school and they then cooked lunch for us. Every ingredient used was something I recognized from Trinidad, (if you know its history). It was absolutely delicious and I was happy to share that experience with a few of the friends I served with. It is during my time in service where I also met my husband!
Fast forward; I decided that after my enlistment was over, I would go to culinary school. It was a great learning opportunity and some amazing friendships were formed. I always knew that food would be a huge part of my life. I enjoy bringing people together not just to eat but to really enjoy the food and share stories about the meal; which gives you a glimpse of where that person comes from. I also love teaching my two girls about food and to appreciate it. It is truly an experience!
My cooking is not limited to Trinidadian food but from my travels during my time in the Navy and then culinary school. This business is dedicated to my grandmother and mom as they have taught me so much and to always go above and beyond!
