Vicente also makes an incredible gazpacho manchego. Although less known than paella, it’s a delicious Spanish dish that everyone should try.

We have been enjoying our time here in the home country; we are also busy booking catering events for this spring/summer and fall.

Just one last weekend for some adventures.⛰️ About 5 years ago we hiked to the top of this mountain, “MonteMayor.” Andres was just two months old. And today he hiked to top on his own 🥰 ❤️

Well that’s a wrap for our 2022 season. It was a great one with lots of fun festivals and many beautiful weddings on this gorgeous western slope of Colorado.

Time for our amazing chef to take a rest and for our family to go to the homeland for a couple of months🇪🇸

On our days off, we often still cook paella for our friends 🥰🥘 This one came out exceptional - the original Paella Valenciana with local rabbit and chicken. The best part of the party - when the pan doesn’t fit through the door 😂🥘

Ana María, our daughter, woke up two times last night saying “Mama push me closer, I can’t reach my paella” and another time crying “oh no my paella is all gone.” 😂

No worries baby girl you can have more paella tomorrow night ❤️🥘

Tomorrow will be one the last chances this season to come enjoy some shrimp paella, tortilla de patata and Spanish jamón and manchego plates.

About Us

Based in the quaint and picturesque North Fork Valley, Paonia Paella serves organic, fresh Spanish cuisine made from scratch. Everything is homemade, from classic Valencian paella to nutritious salads and Spanish omelet or “tortilla patata”.

Paonia Paella was the brainchild of couple Vicente Perez Martinez and Sarah Perez Sadler while they were living together in the beautiful city of Valencia, Spain.

Both Vicente and Sarah have a great love for cooking heathy, organic food and, of course, eating it too! They thought there could be nothing better than to make their passion their profession!

Cooking beside his grandfather as a young boy in Valencia, where Paella originated, Vicente naturally spent his childhood learning how to make this delicious dish. Throughout his adulthood he would host Paella parties and gatherings in the streets or in the "campo” of Spain, and over the course of many years Vicente perfected his own paella recipe.
