Sweet Shrimp “Ama-ebi”. I like the challenge of some eaters who “don’t like” certain foods. I love it even more when I convert someone into a super fan of any dish they thought they would hate. This is one of those food items that will test your so called “adventurous foodie palette”. Try it, if you ever get a chance to. Better when it’s “live”.

We arrive hours before dinner starts and we prepare all the fresh ingredients inside our clients kitchens. The food prep phase before dinner service is my zen and sacred space. That's because I'm a super extroverted individual and I can easily get burnt out from too much social interaction. This time allows me to relax and recharge my batteries.
