Prosciutto Roll-ups
This is a great snack if you are keto, looking for high protein, or something different but tasty.
I love to make this. It’s so simple.
1 package of goat cheese or if you don't like goat cheese use your favorite cheese.
1 package of prosciutto
1 avocado
Fresh arugula if you don’t like arugula use your favorite micro greens or sprouts
1 Tablespoon extra virgin olive oil
A drizzle of balsamic dark or white
Fresh ground black pepper
If you want to spice that s**t up add a sprinkling of crushed dried red pepper.
Make it: lay out a slice of prosciutto, lay your greens of choice on top of half, and place a slice of Alvacado on top of the greens then crumble of goat cheese next to that. Roll up starting at the end with the topping on it. Once you have rolled as many as you want, plate them sprinkle them with black pepper, drizzle with olive oil and balsamic, and you're ready to dig in.
