Being in the biz makes it challenging sometimes to make it to lunch, since we’re serving it so often ourselves. However, we had a Thursday off and made to first week of soft opening.

Widi and Jason have been working for a year to make this brick and mortar dream come true and we wish them all the best.

Their food was amazing and fresh on the truck and we can only imagine with a well trained team they will maintain the high bar they set in their former iteration.

We were treated with habanero chicken loaded fries, and even though we were trying to keep it healthier with a salad version of meals for lunch, we devoured it regardless.

Many blessings and much luck to this culinary duo.

Worked an event last night with several other vendors, whom we hadn’t met before were another husband wife team, which has become more rare these days. They were refreshingly friendly and assisted in our reverse departure (truck and trailer combos are sometimes placed in tight spots, made more tight in a dark poorly lit space.

But then we had a medley of slices to taste. Solid pizza from a big blue converted bus with a wood fired oven and classic NY style dough. If you see them about, give them a try. And if you’re catering an event, they should be on your list.

What could be more than ? You don’t technically have to be to make an amazing and delicious rich beefy with a proper mirepoix, loads of basil and garlic, slow cooked to perfection.

A good semolina pasta, a hearty scoop of sauce, cheese dust and a generous dollop of ricotta finished with red pepper flakes and fresh parsley….

This makes a sunday feel like a simple feast of pure comfort. A hug from a nonna you didn’t even know you had.

Today’s catering special request was our and it was a …

A take on that Carl’s place with a slightly healthier, yet decadent final result.

The chicken simply grilled with melted cheddar, thick bacon, our cart made bbq sauce we call , But the game winning play was a triple dribble assist on some epic sweet Washington onion rings…

Cut deep, seasoned with our flavor, floured, egg washed, floured, egg washed and finished in crisp panko crumbs.

It’s the extra time prepping something simple yet fresh that put this beauty over the top…

You might know who we served, or it may have just been an air ball on our part, but either way palates we’re lit up like a scoreboard.

We said goodbye to one of the first couples we met as we embarked on our mobile food cart journey. Oscar and Linda the dynamic duo of (formerly well established as )

They were a staple of the scene from the west side to the east and all points north, south and in between.

We could always count on huge earnest belly laughs and smiles from Oscar and Linda’s watchful eyes keeping things on track and in order. An amazing team in life, and now on their next mobile adventure into the great wide open.

They sadly passed days apart which knowing their commitment to eachother is a rarity these days. Partners forever who will be deeply missed. Their authentic kindness and dedication to their family, friends and customers was and will be something to remember them by.

We love you both and will always miss you tremendously.

Just a little R&D with a help from a Costco rotisserie chicken.

As it is impossible to find Sambal Olek and Sriracha, we are pivoting our Asian inspired flavors from our classic to a , featuring a selection of delicious cart made sauces.

A pineapple teriyaki for the protein side and a sesa/miso dressing for the salad, garnished with pickled ginger and black&white toasted sesame seeds…

We will also be sourcing different sriracha sauce brands for those who like it with a little zip!

Some days the supply chain shortages and challenges require rethinking the limitations of the box.

Sometimes you just need to indulge in simple guilty pleasures. , A and , Or Ted …when you’re craving an extra crunchy onion ring, a double flour and egg dipped with a finish is well worth the effort. So darned delicious, but something we could never keep up with at the cart. It would be folly to even consider…but highly recommend for a classic culinary delight at home!

Yeah, it might be all that you get…but when you get it, it’s mighty tasty!

Made the first few pies with the new . Just some simple classics.

To be honest, burned the first couple. Definitely takes getting used to it.

Of course these are just pies. We won’t even pretend to add to our menu. But soon we need to get together with our fellow families for some circular culinary creations.

In the mood for a simple chocolate cake with ingredients you probably have in your pantry? We love ’s recipe, but this recipe was circulating around so we tried it, and much to our surprise, it was amazingly plausible. We used a special dark cocoa powder.

We baked at the recommended 375 for about 30 minutes.

And of course it would be even more amazing with a rich chocolatey ganache or frosting, but in trying to keep with slightly lighter decadence we opted for a dusting of powdered sugar.

We’re excited for our friend Jeff Chow to open , but while we await his reopening, today was the perfect windy and chilly day for a …

So we pulled some filling and wrappers we had in the freezer and made up some simple yummies. Not as expertly made as Mr. Chow; but then again we wouldn’t even pretend to, however it did hit the spot on this blustery day.

So looking forward to trying his new offerings once his cart is in the full swing. is his target, so stop on by and try his amazing food.

Went to Denver area and had to treat sis and fam to some fresh . Decided on Sicilian style/square pizza.

Every kid known generally loves , so that was the big winner.

Came home and had to try out accessory we got for our , because an outdoor option for makin’ pies is essential during the summer.

It worked out fairly well for a first time attempt. Definitely a little learning curve. And our homemade dough will be the real test. We compromised on dough balls, which were pretty good in a pinch, but nothing like 36hr rested dough.
