Our French Bread is "singing" after coming out of the oven: the bread gets a good crispy crust in our brick oven. When we take it out, the soft,chewy crumb cools off and slightly contracts. Since the crust is not flexible at that point, it starts to develop fine cracks.
That's a sign for some quality crust bread 😁

Bread Oven Trivia:
The walls and floor surrounding our oven chamber are 8 inches thick. We start the fire in the oven at 5:30 in the morning and keep it going until 8:00pm tonight. It will be around 1,200 degrees inside the oven, and the outside mass (covered by a lot of insulation) will get to around 600 degrees. We will let those temperatures equalize overnight, so we can bake at just the right temps on Friday night.
Find us at the Rochester Farmers Markets @rochesterdowntownfarmersmarket on Saturday from 9 until Noon. If you order ahead, we will hold your bread for pickup in Rochester in the morning, or Downtown Zumbrota between 2 and 3pm.
