Recently I’ve started a new job with a different company.

Since the day I walked in the door and saw these Chairman’s Reserve Prime St. Louis ribs I’ve been drooling of firing up the Rec Teq and puttin some smoke on em.

Just so happens that tomorrow I get to do 27 racks for an event.

This is going to be very very fun!

What a day!

20lbs of pit beef
24lbs of pulled pork
10lbs of smokehouse chicken salad
30 burgers
48 dogs
10lbs of mac and cheese
10lbs of beans
10lbs of cole slaw
10 lbs of potato salad

GONE!!!

The volunteers, staff and friends of Interfaith Works in Montgomery county came with an appetite.

Thankfully Julie took some time to grab some media for me to share with you all cuz I sure didn’t have a minute to step away from the grills!

So a couple of things have happened in the last 2 days, 1 awesome and one very humbling.

The awesome part, I got another new smoker…..
( #6 in 2 years)

The humbling part…. It’s an offset.

I am so used to having technology allow me to make some great barbecue however, that doesn’t exist on a stick burner. Soo we had to improvise.

My rib cook took 2 hours longer than normal, burnt up way more charcoal than necessary….. however with the assistance of my Ring camera and a few phone calls, I’d say the finished product wasn’t half bad.

Sundays are meant for prime rib!

Over 100 sandwiches sold and just over $1k donated to the Wilde lake Children’s Nursery. For just over 2 hours in service and constant rain, I’d say that today was a success. Huge thank you to everyone who showed out to support the school. The weather was a bit of a challenge but I hope you all enjoyed the food as much as I enjoyed serving it!

Welcome everyone to Meat & Heat BBQ Co. I’ve spent the last 18 years of my working career in the food service industry with a specialty in all things meat. With the support of my amazing spouse Julie, and some really awesome friends and family, I finally made the jump into the catering world.

From here forwards my goal is to provide the community with excellent food at a fair price, all while sharing my passion for all things meat and barbecue.

We are in the beginning stages or navigating the business side of this adventure. With that said you’re going to see a lot of content from fun cooks as well as client events. Please feel free to like, share and follow along the way.

Without further ado, I’d like to announce our first event this Saturday May 4th from 10-1 at the Wilde Lake Children’s Nursery School. They run an awesome Co-op program in Columbia, Maryland. This entire event for us is non profit and all proceeds will go direct back to support the school. All meats provided by Boarman’s Meat Market.

Stop on by and check us out. I’ll be on the pits with Panda, and Klause serving up some of my fan favorites. Hope to see you there!
