In the kitchen ALL DAY today prepping all of your favorites! We roasted some beautiful veggies with Extra Virgin olive oil, Pink Himalayan salt and stuffed empanadas and pasteles with them. We also folded full fat provolone cheese into empanadas with some of those roasted veggies. Cowboy empanadas stuffed with marinated brisket, country fried potatoes w/bacon, and American cheese. Yes please! Pasteles (Caribbean tamale) with lots of stewed pork, just like grandmas. 😍
